Growing up, grilled cheese and tomato soup was a mainstay on our menu. Usually we had this on Sundays, when it was busy before/after church. Or, if no plan had been made. I can see my mom at the counter, swiping mayo on each slice of bread, placing the cheese, topping it all off with softened butter. She could toast these sandwiches perfectly!
We even had this meal for CHRISTMAS lunch last December! Which was totally crazy — and, not my favorite — but, my darling grandparents sure loved it!
YES! Our tomato soup comes from a CAN! Gasp! Horrors!

Yes, that is AMERICAN cheese, y’all! Nothing fancy. Not one bit fancy. Okay, maybe if you count the wheatberry bread as fancy, we have one fancy point. 😉
This is how I like to eat mine…. The whole sammy in the soup. YUM!! Get ready for a comforting, easy weeknight meal of grilled cheese and tomato soup.

Grilled Cheese
Description
The BEST grilled cheese & tomato soup you will ever make! A few easy pantry staples, and you have a meal within 10 minutes. Great for busy weeknights!
Ingredients
- Bread (any kind will do. I like the Wheatberry, or Oat kind. But, plain white bread works, too!)
- Mayo
- American cheese
- Butter
Instructions
- Slather each slice of bread with a thin layer of mayo, crust to crust. Top with a double layer of cheese slices. Put the “lid” of the sandwich on, then slather BOTH sides with softened butter, crust to crust.
- Toast in a skillet over medium high heat. Pressing the sandwich down as the cheese melts. Cut crosswise, and serve immediately!

Tomato Soup
Description
GET OVER IT….! This is what I grew up with, and when I have *real* tomato soup, I do NOT like it. {{I’m also not a huge tomato fan in general, so the Campbell’s is a-okay with me!}}
Ingredients
- Canned Tomato Soup
- Half can of water
- Half can of Milk
- 1–2 teaspoons Oregano
- Salt & Pepper, to taste
Instructions
- Add soup, water, and milk to a pot and bring to a simmer. Add oregano, salt, and pepper, stir and let simmer for 5 minutes.
