It’s Monday! Which means Red Beans and Rice! I It’s Monday! Which means Red Beans and Rice! I’ve got a quick cook recipe that uses canned kidney beans. ((Tell me you’re not from Louisiana without telling me you’re from Louisiana!)) RECIPE: 1 lb Andouille Sausage, sliced 1 small Onion, diced 1 Green Pepper, diced 2 Celery Stalks, diced 2 cans Kidney Beans, drained and rinsed 2 cups Chicken Broth 1-2 TBS Cajun Seasoning Cooked Rice In a Dutch oven, sauté the sausage until it’s crispy. Leave the drippings in the pot, using that to saute the onions, pepper, and celery until soft and tender. Add in your kidney beans, the chicken broth, and a tablespoon of Cajun seasoning. Let this simmer over low heat for 20-30 minutes, longer if you have the time. Taste to see if you need more Cajun seasoning for extra kick! Serve with a plop of rice and hunks of bread! If you like your beans and rice thick and creamy, blend some of the beans before adding them into stew. Want a printable version of this recipe!? Salmon + Green Bean Sheet Pan Meal! Drizzle a pie Salmon + Green Bean Sheet Pan Meal! Drizzle a piece of salmon with olive oil and sprinkle on some Ranch powder and House Seasoning! Add two pats of butter before baking in the oven. Steam up your green beans, then crisp them up in the oven with the salmon. Such a delicious lunch or dinner recipe that takes less than 15 minutes! Here’s the recipe: Coat your salmon in olive oil, then sprinkle Ranch seasoning and House Seasoning on top. Add two pats of butter on top. Bake at 375˚ for 10 minutes. While the salmon bakes, steam some green beans in the microwave ((or just put them on the same sheet pan with the salmon!)). Once the salmon comes out, add the beans around the salmon and broil (carefully!!) the salmon until golden brown on top, and the beans gets a little color. All the Cheese Cheeseball! 2 Oz Bleu Cheese 2 Oz All the Cheese Cheeseball! 2 Oz Bleu Cheese 2 Oz Brie Cheese 2 Oz Unexpected Cheddar 2 Oz Sharp Yellow Cheddar 5 Oz Goat Cheese Dip (from Vermont Creamery!) 6 Oz Cream Cheese, softened 2 TBS White Wine 2 tsp House Seasoning 1 tsp Red Pepper Flakes 2 tsp Minced Onions 1 Scallion, sliced Mix all the ingredients together. Divide into two portions. Dump it onto plastic wrap and shape it into either a log or a ball! Serve with crackers! The BEST part about this recipe… you MUST make it ahead of time! So, a few days before your party, mix it up, and store in the fridge. You could even do this a couple of weeks ahead of time, and freeze until the day before. I’m going to say it again, and again… there is no reason you need to be running around on the day of your party, doing ALL THE THINGS! YOU choose your party menu, so choose recipes you can make ahead or items you can pick up and assemble! Unpopular Opinion: I’m not a fan of the “That Unpopular Opinion: I’m not a fan of the “That Girl” trend. If you’re unfamiliar with “that girl” it’s a long list of things (society?!) tells you to do so you can be THAT girl. The unattainable girl we see on social media. Now, listen, I am not poo pooing the girlies who have a strict routine, and appear to have it all together. Good for you! You go, girl! But, last time I checked, we’re all humans. We’re ✨individual✨ humans! ➡️ So, what works for one person won’t work the same for all people. And while I whole-heartedly believe in cultivating a life-giving routine for yourself and the season you are living, don’t steal someone else’s routine and expect the same results. While this month is all about Refreshing Your Routine, it’s all meant as inspiration and motivation! To lean into the simple, mundane moments of your life, and stir up something incredible. The trick to marinating juicy, tender chicken no o The trick to marinating juicy, tender chicken no one is talking about… Raise your hand if you’ve ever marinated chicken, and you think it’s going to be *so good*!? You bite into it, and it’s mealy, almost tough, and all around bleh?! I’ve got a few tips for grilling the *best* chicken! First, if your marinade is highly acidic marinate for 30 minutes or less. Say you want to marinate your chicken in pickle juice (delish!). Because it’s so acidic, the chicken only needs a little bit of time. The acid starts to cook the chicken (that’s why it turns that white opaque color!). Yes, chicken can marinate in seasonings and other “juices” overnight just fine. 👻 My trick is to use the acid just before grilling! Whether it’s a spritz of lemon juice, drizzle of vinegar, or a heavy handed pour of pickle juice, 15 minutes is all the chicken needs! Take this marinade! It’s French Dressing plus some fresh sliced onions and a garlic and herb seasoning. When I went to get my grill ready, I added a drizzle of Prosecco Vinegar. That 15 minutes with the vinegar was just enough to add flavor, but not make it mealy and tough. Want the recipe?! Here you go! 1 cup French Dressing 1 small Onion, sliced 1 TBS Garlic & Herb Seasoning 2 TBS Prosecco Vinegar Place the chicken in a baggie with the French dressing, sliced onion, and garlic and herb seasoning. Smoosh around to evenly coat, and let it marinate overnight. When you’re ready to grill, add the Prosecco vinegar while you prepare your grill. If you’re serving a salad, choose one side dish. ✅ Appetizer: Choose something you can make a head, or assemble without cooking. ✅ Fun Thing: I love using fun servingware (like the LOVE bowls for charcuterie!). It’s an instant conversation starter! ✅ Showstopper: Whether it’s HOW you serve your meal (on a tea-tray!) or WHAT you serve, something needs to be a showstopper. Sometimes, it’s a bit over the top, and lacking the “everyday-ness” of the point of hosting people… Here are FIVE things you do NOT need at your party! 1️⃣ Over the top, one-time-use items. I get it if it’s for a specific birthday, but even then… Do you really need all that stuff?! Try shopping your home first, and getting creative with what you already have! 2️⃣ Bad Attitudes. No one wants to be greeted by a bad attitude, whether you are opening the door, or the guest coming through it! Leave it at the door, or ask for help getting out of your funk. 3️⃣ Stuffy Food. It’s fun every once in a while, but people are there for you! Good food is what lures people to your table, but don’t feel like you need to make it a 5-star restaurant worthy meal every time. 4️⃣ Disorganized Chaos. We are all busy people! Know your own capacity and when you have a little more to willingly open your home. ((Every season is different, and each season doesn’t last forever!)) 5️⃣ Unintentional Expectations. You, the host, have an idea in your mind of what you hope your time together looks like! Let your people know your expectations and everyone will have a better time. Are you guilty of any of these?!
