National Soup Month!

In the cold winter months I love a warm soup, bubbling on the stove top. January is National Soup Month, so I’m sharing a few tried and true favorites, as well as a new one! Add these to your meal plan, and you’ll be in soup heaven!
I’m not the biggest soup fan… I don’t crave soup. Mainly, because I just cannot eat it politely. {People who know me IRL are lauging.. I can’t eat politely, period. I’m a spiller.} But, National Soup Month is during quite the cold month for us!
This week, I’ve made enough Enchilada Soup to take for lunches this week. It is SO good! The longer it sits, the better it gets — seriously!
This French Onion Chicken Soup is a heartier version of the usual onion soup we all know and love. Leave out the bread, and you have yourself a very low carb soup!
This White Bean Chicken Chili over Cornbread Waffles is OUT OF THIS WORLD! It’s another one that is a great make on a Sunday, and eat it for lunch all week. Just make some extra cornbread waffles, and pop them in the toaster. They’re *clutch* to this being the dreamiest soup!
I’m also a HUGE fan of Chick Fil A’s Chicken Tortilla Soup — here’s my twist on the drive thru staple!
Finally, this Beef & Broccoli Ramen is DELICIOUS!!! And, for a low carb version, you could always use spaghetti squash or zucchini noodles, and have a super healthy dinner.
