How to Make Them

1️⃣ Prep the Tortillas – Cut tortillas in half and spread each one with jalapeño pimento cheese.

Party Quesadillas are the ultimate appetizer for entertaining! Stuffed with jalapeño pimento cheese, rolled into cones, and baked to golden perfection, these quesadillas are easy, cheesy, and irresistibly delicious. Perfect for game days, dinner parties, and festive gatherings!




Ingredients

Scale

12 Fajita-sized Tortillas, sliced in half (making half moons)

10 ounces Jalapeno Pimento Cheese

1 cup Shredded Cheddar Cheese




Instructions

  1. Place a few halved tortillas on a cutting board and smear one tablespoon of pimento cheese on top, followed by a sprinkle of cheddar cheese.
  2. Roll the tortillas up to create a cone. What worked best for me is taking the bottom point and bringing it up to a 45˚ angle, then rolling.
  3. Place seam side down in a cast iron skillet.
  4. You’ll create a ring and then place an additional layer of the rolled tortillas, leaving a hole in the center.
  5. If you need help guiding your “ring,” place the serving bowl in the center and place the rolled tortillas around the bowl.
  6. Repeat this process for all the tortillas or until your skillet is filled.
  7. You can cover the skillet with a tea towel and store it in the fridge until you’re ready to bake, or you can bake immediately!
  8. Remove the bowl before baking at 350˚ for 25 minutes or until golden brown and melted.
  9. Serve with a dip of choice! Guacamole, salsa, ranch, whatever you and your family like!
