After some trial and error, this keto friendly recipe for Cheesy Cauliflower Grits does the trick! Of course, they’re not real grits, but I fooled several people — including my father, who had no idea he was eating cauliflower!

When making anything with cauliflower, it’s best to add the florets to a full pot of water, and boil like pasta. With steaming, the cauliflower can burn very quickly, and no one has time for that. Not to mention that cauliflower stinks as is… burnt cauliflower, NO GO. <—- I’ve done this way too many times…. Stick to the boiling method.
Cheesy Cauliflower Grits come together in under 20 minutes — but, you could make it the day before, and toss into a baking dish. Half an hour before serving, just pop into a cold oven turn to 350˚ and let it heat until brown and bubbly.
