In the south, grits reign overall.

And for my family and myself, grits are our comfort food.

But, when you are trying to keep to the low carb lifestyle, grits are the last thing you can eat…

So! After some trial and error, this keto-friendly recipe for Low Carb Cheesy Cauliflower Grits does the trick!

Of course, they’re not real grits, but I fooled several people — including my father, who had no idea he was eating cauliflower! 

Nothing is better than a bowl of cheesy, creamy grits and these Cheesy Cauliflower grits hit the spot without the added carbs.

Cauliflower is all the rage and makes a great substitute for a lot of recipes: mashed potatoes, rice, pizza crust.

Trader Joe’s offers lots of cauliflower options! They’re Cauliflower Pancakes are out of this world! Low carb latkes, y’all!

 

HOW DO I MAKE LOW CARB CHEESY CAULIFLOWER GRITS?

First, you’ll boil a bag (If you’re purchasing the TJ’s version, it’s 12 ounces!) of cauliflower florets.

While the florets boil until soft, in a mixing bowl add cream cheese, butter, and hand-grated cheddar cheese.

Drain the cauliflower and add to the cream cheese, butter, and grated cheddar.

With this funky tool, mash the cauliflower until it resembles grits.

Check for seasonings, does it need salt & pepper?

Finally, serve with sliced green onions and an extra grind of black pepper! Yum!

Description

Cheesy Cauliflower Grits are a deliciously easy low carb/keto recipe idea that will have you thinking you are eating grits!


Ingredients

Scale
  • 12-ounce bag Cauliflower Florets
  • 2 tablespoons butter
  • 2 ounces cream cheese
  • 2 ounces cheddar cheese, shredded
  • 1 teaspoons salt (more to taste)
  • 1/2 teaspoon black pepper (more to taste)
  • 1 tablespoon sliced green onions


Instructions

  1. Pour bag of cauliflower florets into the pot of water.
  2. Turn stove to medium-high heat, cover, and bring to a boil.
  3. Boil until soft, 8-10 minutes.
  4. In a separate medium mixing bowl, combine butter, cream cheese, cheddar cheese, salt, and pepper.
  5. Once cauliflower is soft, drain, and add to mixing bowl.
  6. With a star-shaped masher, mash cauliflower into cheese and butter, until it resembles grits. Taste to adjust seasoning.
  7. Serve immediately, garnishing with sliced green onions.

Notes

Make the night before, and store in a covered baking dish! Half an hour before ready to serve, remove cover and place in a cold oven. Turn the oven to 350˚, and heat until brown and bubbly, about half an hour.

  1. A friend used this recipe to make shrimp and grits for me. It is AMAZING! I’d like to know a few things though. How many servings I will get per recipe? How many carbs per serving? Thanks






    1. Hey, Catrina! So glad you liked this recipe, and LOVE that y’all put shrimp in it!! YUM!!! As far as servings, I would say the original recipe is for 2-4 polite people, or 1-2 big eaters. 😉 For carbs per serving, I chose 4 servings, and it comes out to 6.5 carbs per serving.
