Sun-dried tomatoes are mixed with fresh shallots, garlic, basil, ricotta Salata, tomatoes, balsamic vinegar, and olive oil. Together, it’s a dreamy food marriage, your fresh baguette is dying to dip into.
I don’t know about you, but when I’m serving a meal, I need something super easy I can put out before the big show!

How to Make Italian Bread Dip
Gather your ingredients:
- Shallot
- Garlic
- Fresh Basil
- Sun-Dried Tomatoes
- Tomatoes (fresh or confit)
- Ricotta Salata (or feta!)
- Balsamic Vinegar
- Olive Oil
This is one hearty bread dip recipe idea! It’s filled with fresh flavors, instead of the usual dried herbs and spices, you’ll find at some Italian chain restaurants.
First, in a bowl, add your diced shallots, garlic, and basil.
Add in a few spoonfuls of sun-dried tomatoes, as well as tomato confit.
((If you don’t have tomato confit, just use a handful of fresh cherry tomatoes that you’ve chopped!))
Crumble in some ricotta Salata, drizzle over balsamic vinegar…
Sprinkle in red pepper flakes…
And finish with a hefty drizzle of olive oil and stir really well.
You can add some salt and pepper if you need to! The ricotta Salata is super salty, so I don’t like to add any. But! You do you, friend!
Grab your crusty baguette, and dip on in!
This is also phenomenal tossed with fresh hot pasta!
This is one of those recipes you make, then you continually go back to your counter just to sneak a taste!
It’s best to make it earlier in the day, let it sit in the fridge, then bring it out to come to room temperature half an hour before serving.
Serve it with a spoon, so people can scoop all the goodness and plop it on their piece of bread.
If you really like the people you’re serving, just let people dip on their own.
I also this would make an amazing wedge salad dressing!

- 1 Shallot, finely diced
- 2 Garlic Cloves, finely diced
- 2 TBS Fresh Basil, diced (dried is fine, too!)
- 3 TBS Sun-Dried Tomatoes, chopped
- 1 oz Ricotta Salata (or Feta), crumbled
- 1–2 TBS Balsamic Vinegar
- 1 tsp Red Pepper Flakes
- 1/2 cup Olive Oil
Instructions
In a bowl, mix all the ingredients.
Serve with a crusty baguette!
Notes
You can make this in the morning before serving, just place in the fridge until half an hour before serving.
