Air Fryer Mediterranean Chicken Skewers (Easy Recipe)

I love a good chicken skewer. They’re one of my favorite ways to prep a protein for a busy week ahead.

These are chicken breast chunks that are lovingly glazed with garlic, olive oil, lemon pepper, and oregano. 

It’s a very simple marinade and an even simpler cooking process!

Let your air fryer basket do the work for tender, juicy chicken your whole family will love!

Making Air Fryer Mediterranean Chicken Skewers

In a large ziptop bag, you’ll dump your chicken chunks. I buy mine pre-chunked at the Walmarts, and I love the time-saving-ness of it all.

Then, drizzle in your bottled salad dressing and a little Worcestershire sauce, and zip the top shut.

​Let the chicken marinate for a few hours or overnight, and then get skewering!

You’ll skewer your chicken just before air frying.

I chose to use these six-inch wooden skewers that I soaked in a cup of water (so they won’t burn!). You could also use metal skewers if you have those!

When I was developing this recipe, I thought these would make a really great appetizer to serve with the lemony glaze.

​Air fryer chicken kabobs are super versatile! You could use them in so many ways.

This is one of the reasons I marinated the chicken in a bottled salad dressing and worcestershire sauce. You could air fry all the marinated chicken, but glaze it with other flavors. 

​I made a complete meal with rice, tzatziki sauce, a tomato and cucumber salad and some hummus on a big plate.

The chicken was the best part! So delish!

If you want to make a big batch of Greek chicken skewers, use Greek dressing for your bottled salad dressing. Add a little lemon zest and lemon juice, and your chicken.

In this recipe, I’m using boneless skinless chicken breast, but I’ve also made it with chicken thighs. 

Air Frying Chicken Kebabs

I have a flat air frying basket with my Ninja Foodi Air Frying Oven. I’m positive this recipe will work with other air fryers; you might not be able to fit as much. If your air frying basket is smaller, make sure you use a single layer of kebabs, making multiple batches.

On that note, you could definitely use a grill for this recipe! I don’t have a grill, so I’m trying to create more air fryer recipes that mimic grilling. 

​Before you place your kebabs on your basket, give it a good spray with oil. Not sure which spray to use? Check out this post on What Oil Spray to Use When Air Frying!

I string my chicken onto the skewers, and I make sure to pack the chicken in tightly. 

Having each piece of chicken tightly packed together does a couple of things:

First, it’s really helpful when you go to turn the skewers over. We’ve all been standing at the grill trying to get that one kebab to flip over, and the chicken piece just stays there!

Second, the finished chicken skewers look better than larger pieces spread out. ((A very small thing, but it makes a difference!))

​Finally, I think it keeps the chicken moist and tender.

Once you’ve run your chicken through your skewers, place in a 350 degree air fryer, and let it go for 10 minutes.

After 10 minutes, you’ll flip the skewers over, crank up the heat to 400 degrees, and let it go for another 10 minutes.

While the skewers are going, make the glaze.

The glaze is really just olive oil, garlic powder (fresh is great!), oregano, lemon pepper seasoning, and some thinly sliced green onions. 

Glazing the Chicken Skewers

Once your chicken is cooked through to an internal temperature of 165 degrees f, you’ll swipe your glaze over the chicken.

In a little skillet add in your olive oil, oregano, lemon pepper seasoning, and thinly sliced green onions.  Heat up and swirl around until everything is just sizzling a little bit.

This glaze is delightful over pita bread or naan, too! Just saying…

While I used very simple ingredients that are most pantry staples, you could use all fresh ingredients!

If you want to use red onion instead of green onions, go for it. That would add a nice red color!

Add in some onion powder and black pepper if you’re craving it. 

Using a silicone basting brush, you’ll swipe the hot glaze over the chicken skewers and serve!

Serving A Meal with This Recipe

To complete your meal, serve with some rice, a shirazi salad, zhuzhed up hummus, and pita crisps.

Ingredients

  • 1.5 pounds Chicken, cut into chunks (I used boneless skinless chicken breast)
  • 1 cup bottled Italian Dressing
  • 2 TBS Worcestershire Sauce

“GLAZE”

  • 1/4 cup Olive Oil
  • 1 tsp Garlic Powder (1 garlic clove)
  • 1 tsp Oregano
  • 1 tsp Lemon Pepper Seasoning
  • 2 Green Onions, thinly sliced


Instructions

  1. In a large zip-top bag, add your chicken pieces along with one cup of Italian dressing and two tablespoons of Worcestershire sauce. Close the bag tightly and move around so each piece of chicken is coated in the marinade.
  2. Place the bag in a dish, and keep in the fridge for up to 24 hours before air frying.
  3. 15 minutes before you want to cook your skewers, place wooden skewers in water to soak.
  4. String chicken pieces onto skewers, tightly packed them together.
  5. Place each skewer on the oiled air fryer basket.
  6. Air fry at 350 degrees for 10 minutes.
  7. Remove and flip each chicken skewer over.
  8. Air fryer again, at 400 degrees for 10 minutes.
  9. Make the glaze while the second air fryer happens.
  10. In a small skillet, heat 1/4 cup of olive oil with one teaspoon each of garlic powder, oregano, and lemon pepper. Add the green onions and let them sizzle for 2 minutes.
  11. When your chicken is cooked through, remove and plate.
  12. Brush the flavorful glaze over each chicken skewer, and serve!
