Grilled Greek Chicken Salad is an easy low carb dinner idea any night of the week.
A quick grill of the lettuce brings a whole new flavor profile to this traditional salad.
Oh my! Greek Salad is one of my favorite dishes. The acidic dressing and oregano spices with cool cucumbers are just a great summertime or Fall recipe idea. For this Grilled Greek Chicken Salad, I grilled the lettuce wedges, placed on a large sheet pan and topped with all the greek fixings.
What’s in a Greek Salad?
- Lettuce
- Cucumbers
- Red Onions (I like to use Shallots, there a much milder!)
- Feta
- A protein of some sort (We’re using grilled chicken here today!)
- Olives
- Dressing
This salad is usually a very rustic salad – chopped up veggies with dressing and feta cheese. SO good! Grilled Greek Chicken Salad can “be” so many different things! You can pick and choose what you want, adding items or taking them away, and creating a flavor profile you love.
If you have the components of this salad on hand, you can assemble this entire sheet pan in about ten minutes. If you grill your lettuce as I have here, you can have this meal on the table in about 20 minutes.
What are the components to have on hand?
- Romaine Lettuce – for this salad, I leave the core on and slice into 1/4 wedges.
- Sliced Cucumbers – I use Hothouse or Persian Cucumbers since that’s what I buy most often for low carb/keto meal planning.
- Chopped Tomatoes – You could use this Tomato Bruschetta Salad on here!
- Grilled Greek Chicken – Meal Prep Grilled Chicken is fantastic to have on hand!
- Parmesan Crisps – I love getting these in my Prime Pantry Box!
- Sliced Shallots
- Greek Dressing – I’ve added a homemade version to this recipe, but if you just want to buy a bottle, here’s the one I recommend.
- Feta Cheese

Have you ever grilled lettuce for a salad?? You should definitely try it! It adds a subtle-smokey flavor to what can be rather boring lettuce. Just drizzle with a little olive oil, sprinkle salt and pepper on top, and put the lettuce wedges right onto the grill for about 30 seconds. I grill just the top sides. Pro Tip: leave the core intact, so you can easily flip on the grill.
After you’ve grilled the lettuce, place on a sheet pan and top with all the components of Greek salad. You could even turn this into a “bar” of sorts, with all the Greek salad fixings in dishes, and let people make their own.
Each of these lettuce wedges serves two polite people and one hungry person. Just lay the lettuce wedge with all the stuff on a plate, and chop it up! I like to add a little more homemade Greek dressing – it’s SO good, y’all. I added capers + their brine and the acidity of the dressing is just perfect. Leaves a little pucker in your mouth, but so delicious with crisp cucumbers and creamy feta cheese.

Ingredients
Greek Dressing
- 1/4 cup red wine vinegar
- 1/4 olive oil
- 1/4 cup mayo
- 1 tablespoon stone ground mustard
- 2 teaspoons onion powder
- 2 teaspoons garlic powder
- 2 teaspoons oregano
- 2 teaspoons capers + brine
For the Salad
- 1 pound thin sliced chicken breasts
- 1 head of romaine lettuce, core intact, cut into 4 wedges
- 1 cup sliced cucumbers
- 1 cup tomatoes
- 1/3 cup feta cheese
- 1/4 sliced shallots
- 1/4 cup parmesan cheese crisps
- 1/4 cup french onions
Instructions
Stir all dressing ingredients together. Using 1/3 for the marinade. The other 2/3 can be stored in a jar or air-tight container in the fridge for up to two weeks.
Marinate chicken for an hour, or overnight. Grill over medium high heat untill cooked to 165 degrees. let rest 5-10 minutes while you prepare the other salad ingredients.
Drizzle lettuce wedges with olive oil, salt, and pepper. Grill over medium high heat for 30 seconds on each side. Place wedges onto serving platter and top with salad components + sliced grilled chicken. Drizzle dressing on top, or serve on the side.
