It’s filled with hearty chicken, creamy rice, the soup mix that makes everything better, and topped with the sinfully crispy French’s onions.

I don’t know why people knock them… they’re always so good and comforting!

How to Make French Onion Chicken and Rice Casserole

You’ll need simple pantry staples to make this recipe:

  • Wild Rice Mix – I love this wild rice blend! Be sure to purchase the one with the seasoning packet. I keep this boxed rice mix in my pantry for an easy side dish, or stir it into soups, it makes a great base for Poppy Seed Chicken casserole, too!
  • Onion Soup Mix – this is what makes this French Onion Chicken Casserole! This little packet is PACKED with flavor!
  • Cream of Mushroom Soup – it’s not a casserole unless you’ve got a can of creamy of something soup, huh?!
  • Sour Cream – sour cream in a casserole is just delightful! It adds a tangy flavor you’ll begin to miss when you don’t use it.
  • Chicken – I baked boneless skinless chicken breasts in the casserole, then shredded them up. But! If you have a rotisserie chicken you could definitely use that and save a ton of time!
  • French Onions – the crunchy ones you use for green bean casserole!

After you’ve gathered your ingredients you’ll need a casserole dish or a braiser pot like the one pictured.

Start by drizzling a couple of tablespoons of olive oil into the bottom of your casserole dish. I like the flavor of olive oil, but feel free to use cooking spray! You just want to make sure nothing sticks!

To a large mixing bowl, add the packaged rice mixture, a packet of french onion soup mix, a can of cream of mushroom soup, sour cream, and a can of water.

Mix all of this together, until evenly combined.

Lay your chicken breasts on the bottom of your baking dish.

If you are starting from raw, uncooked chicken. Read further down in the printable recipe card for instructions on cooking this french onion chicken and rice casserole with rotisserie chicken!

Salt and pepper the chicken on both sides, then pour the soup and rice mixture over the chicken breasts.

Slice up fresh onions and lay them on top. This is totally optional! I love Vidalia onions, and wanted some fresh onion flavor in the casserole!

Sprinkle the wild rice seasoning mix over the entire casserole, along with half a stick of butter. Just dot the butter over the top.

Baking this Casserole Recipe

Bake the casserole, covered for 30 minutes, covered.

Once your chicken is cooked through to 165 degrees internally, shred the chicken, and mix the casserole up.

Sprinkle 1.5 cups of crispy French Onions on top of the casserole, then place back in the oven for an additional 5-10 minutes.

And if you didn’t want to serve a green vegetable, then don’t serve one! ((Although, I think you could add in a box of thawed broccoli and REALLY make this into a one-pot wonder!))

Description

Ingredients

Scale
  • 1 Box Long Grain & Wild Rice
  • 1 package Onion Soup Mix
  • 1 can Cream of Mushroom Soup
  • 1/2 cup Sour Cream
  • 1 can of Water
  • 2 Chicken Breasts
  • Half an onion, thinly sliced
  • Seasoning packet from Wild Rice mix
  • 1 TBS Butter
  • 1/2 cup French’s Onions


Instructions

  1. Preheat your oven to 350˚.
  2. In a large bowl stir together wild rice mix, onion soup mix, cream of mushroom soup, half cup of sour cream, and one can of water.
  3. In a greased casserole dish, add two chicken breasts and pour the soup mixture over top.
  4. Layer thin fresh onion slices on top, along with the seasoning packet from the wild rice mix.
  5. Dot this whole casserole with 1 tablespoon of butter.
  6. Bake at 350˚ for 30 minutes.
  7. At 30 minutes, remove from the oven, and shred the chicken using two forks.
  8. Stir the chicken back into the casserole to distribute.
  9. Sprinkle French’s Onions on top and bake for another 5-10 minutes, or until the crispy onions are golden brown.
  10. Serve right from the casserole dish to your hungry people!


Notes

Instructions for using a Rotisserie Chicken!

Mix the soup and rice mixture together. Stir in the shredded rotisserie chicken. Pour into a casserole dish and sprinkle the rice seasoning packet over top, along with dots of butter. Bake for 30 minutes, covered, at 350˚. After 30 minutes, remove the cover and sprinkle french onions on top of the casserole. Bake an additional 5 minutes. Serve!
