You will love this recipe if you love a traditional quiche Lorraine, but want to try a crustless variation. 

This easy recipe makes for a quick breakfast, light dinner, or lunch option. 

It’s lovely paired with a steaming bowl of Goat Cheese Grits, or with a light salad.

How to Make Crustless Cheesy Ham Quiche

First, let’s gather the ingredients you’ll need.

This quiche recipe is a base recipe, so you can swap out any of these filling options for the flavors and ingredients you like best.

Eggs – you’ll need some whole eggs!

Cheese – I love using aged white cheddar in this recipe, but gruyere cheese, swiss cheese, or even sharp cheddar cheese would be lovely in this crustless version of a classic quiche recipe.

It’s best to hand-grate the cheddar! I love this counter-top grater!

Ham – Choose a protein you love, and use it. I prefer to use Rosemary Ham (the sliced one from Costco!) and chop it up into fine bits myself. You could use leftover ham if you have any, too! Bacon would be delicious. Or, leave it out and enjoy a cheese-crustless quiche.

​Heavy Cream – You’ll mix equal parts milk and heavy cream together. This is what gives it the full, silky flavor you want.

Milk – I used regular 2% milk for my other part of the milk options. Mixed equal parts of the heavy cream and the milk, it creates the perfect consistency and the best results in my opinion.

​Other ingredients you’ll need are kosher salt and black pepper, and if you’d like, you can add sliced green onions. I didn’t have any when I made this, so I left them out. But, the green onion flavor definitely adds a delicious addition. 

In a large mixing bowl, you’ll whisk the eggs with the heavy cream and milk. Whisk until they’re light and fluffy.

Then, grate the cheese.

Add most of the grated cheese to the egg mixture. Leave a little cheese for the top of the quiche.

To the bottom of your baking dish, you’ll add the chopped-up ham. The chopped ham tends to get lost in the eggs and bunched up, but it probably doesn’t matter either way.

​When you pour the egg mixture over the chopped ham, the ham will move a little all the baking dish. 

Give the baking dish a jiggle to redistribute the ham and cheese, and get everything arranged. 

Top the quiche with the extra cheese, and pop it into the oven!

Baking a Delicious Crustless Ham Quiche

You’ll bake this in a 350-degree oven until the very center jiggles slightly.

I haven’t tried it, but next time I make this easy recipe, I’ll bake the easy keto quiche in a water bath. 

The top of the quiche gets golden brown and puffs up really high.

​Once you remove the dish from the oven, and let it sit for a few minutes, it will come down.

Let the low-carb quiche rest for 5-8 minutes before slicing into it, so everything can settle and not run out. 

Serving this Easy Meal

If you’re brunch, add a fruit salad to your menu and some of the Best Biscuits, Ever! This is an easy way to create a magical mealtime for sure!

Pro tip: Mix up the egg mixture with the cheese, and store in a covered jug the night before. Have your chopped ham ready for the baking dish, then pour everything in when you’re an hour from serving brunch. It takes very little time, and the end results are phenomenal!

Say you want to serve this for a luncheon. I suggest serving a light green salad alongside the quiche. A bowl of fresh fruit for people to serve themselves always looks lovely and inviting, too.

If you want to meal prep for the week, this is a great way to make your breakfast option. You can pour the egg mixture into muffin cups and bake inside those. Then, you’ve got individual portions, ready when you are!

Ingredients

  • 6 Whole Eggs
  • 1/2 cup Heavy Cream
  • 1/2 cup Milk (any % will do)
  • 1 1/4 cup Shredded Cheddar Cheese, divided
  • 1/2 tsp Kosher Salt
  • 1/2 tsp Black Pepper
  • 1/2 cup Chopped Rosemary Ham (any chopped ham will do!)


Instructions

  1. Preheat the oven to 350 degrees.
  2. In a large mixing bowl whisk the six eggs, half a cup of heavy cream, and half a cup of milk until well combined and the eggs and milk are pale in color.
  3. Add in half a teaspoon of salt, half a teaspoon of pepper, and one cup of shredded cheese. Mix to combine.
  4. In the bottom of a sprayed pie dish, distribute the chopped ham on the bottom.
  5. Pour the egg mixture over the ham, and once all the custard is in the dish, give it a little jiggle to redistribute.
  6. Top the quiche with the remaining quarter cup of cheese, then bake at 350 degrees for 30 minutes.
  7. When the quiche is golden brown on top, and the very center jiggles slightly, the quiche is done.
  8. Allow the quiche to rest for 5-10 minutes before slicing and serving.

Notes

  • You can use any kind of cheese you prefer! Gruyere or swiss cheese would be lovely.
  • Any leftover ham makes a great addition. Substitute bacon as well.
  • If you want to make this ahead of time, store the egg + cheese mixture in a measuring jug with plastic wrap on top in the fridge. I like to store the chopped ham in a separate container. When you’re ready to bake, just assemble and bake according to the instructions above.
