Cathy’s Chicken is an easy, but satisfying meal idea any night of the week.

Before I show you how to make this delicious dinner recipe, let me tell you a story.

Cathy is a dear, dear friend of my family. She’s more than a friend, she’s family.

Her husband and my mom grew up together. Their mothers (my darling grandmother Toni! and Betty, who I called Nana) were best friends for decades.

Anyways! She makes this meal when there is a large crowd, or it’s just her family eating supper on a Tuesday evening!

It is comfort food at it’s best.

Usually served with rice and lima beans, I swapped broccoli for this meal.

How to Make Cathy’s Chicken Recipe

First, gather your ingredients:

  • Chicken Breast – Boneless, skinless works best here.
  • House Seasoning – this simple mixture of onion and garlic powder with salt and pepper. It’s my time-saving/kitchen productivity hack that I think is rather genius. 😂
  • Cream of Mushroom Soup – The canned staple in any pantry!
  • Sour Cream – this isn’t in her original recipe. But, recently I’ve started adding it, and it brings a whole new creamy deliciousness to this recipe!
  • Lemon Juice – fresh is best, but bottled will work in a pinch
  • Dried Basil

Next, gather your kitchen equipment:

You’ll need a casserole dish, a mixing bowl for the sauce, a whisk, a spatula, and a lemon squeezer

Now, let’s season the chicken.

Plop your chicken into your casserole dish, and sprinkle a tablespoon of House Seasoning overtop. If the Lort leads you to sprinkle both sides, do it. But, you don’t have to.

In a medium bowl, dump a can of cream of mushroom soup, sour cream, lemon juice, and dried basil in. Give it a good whisk so it’s combined.

Pour this over the seasoned chicken breast. Spread over the chicken so it’s evenly coated

Bake at 350˚ for an hour, or until the chicken is cooked to 165˚ internally. Use a meat thermometer if you’re unsure!

Serving Cathy’s Chicken

I love pairing it with rice so the rice soaks up all the delicious sauce. (A drizzle of soy sauce is what we all prefer!)

For a green vegetable, I love serving Roasted Brussels Sprouts or Green Beans.

Prosecco Vinaigrette Salad is a wonderful addition as well. The briny acid-based dressing helps mitigate the richness of the chicken and sauce.

Frequently Asked Questions:

Can you make this in a slow cooker? I’ve never done it, but I’m sure you could! I would cook it on low for 8 hours, or high for 6. Make sure to check the internal temperature of the chicken.

Do you have to use Cream of Mushroom? You don’t have to! That’s the only thing I’ve ever used, but feel free to get fancy!

Ingredients

Scale
  • 4 Boneless, Skinless Chicken Breasts
  • 1 TBS House Seasoning (recipe in notes)
  • 10.5 oz can Cream of Mushroom Soup
  • 1/2 cup Sour Cream
  • Juice of one Lemon
  • 2 tsp Dried Basil

Instructions

  1. Preheat your oven to 350˚.
  2. Spray a baking dish, and lay the chicken breast down in the dish.
  3. Sprinkle one tablespoon of House Seasoning over top the chicken.
  4. In a medium bowl stir together 10.5 ounces Cream of Mushroom Soup, 1/2 cup of Sour Cream, the juice of one lemon, and 2 teaspoons dried basil.
  5. Pour this sauce over the chicken, and spread over the top.
  6. Cover with aluminum foil.
  7. Bake at 350˚ for 45-60 minutes until the chicken reaches in internal temperature of 165˚.
  8. Serve with rice and a vegetable of your choice!

 


Notes

HOUSE SEASONING:

  • 1/4 cup garlic powder
  • 1/4 onion powder
  • 1/4 kosher salt
  • 1/8 cup black pepper

Mix all of these ingredients together in a jar, and use as often as you can!
