How to Make Monterey Chicken Sandwiches
First, let’s chat chicken.
I’m using leftover Smokehouse Maple marinated chicken, and we’ll need to reheat it.
You’re going to be tempted to use a microwave here.
Please don’t.
I promise you this sammie will be 1000 times better if you reheat your leftover chicken in the oven.
Plus, you’ve got to melt the cheese, and we all know oven melted cheese is better than microwave melted cheese.
Not because anyone said so, but because I’m saying so.
Second, preheat your oven to 350˚
On a rimmed baking sheet, lined with foil, place your chicken.
I arranged in how it might-could-would-should fit on the buns I’m using.
Speaking of buns, get the Hawaiian buns! They’re just so sweet and soft.
Place your sheet pan in a 350˚ oven, and set your timer for 6 minutes.
After 6 minutes, flip the chicken over, and sprinkle with cheese.
Whatever cheese you have on hand is fine.
I used mild cheddar here, but use up what you’ve got in the fridge.

While the cheese is melting in the oven, let’s get our buns ready.
Slather each side with a healthy swipe of Duke’s Mayo.
Now, for anyone outside of the south who doesn’t have Duke’s in your grocery store… I’m going to tell it to you straight.
There is no other mayonnaise.
None.
I’m sorry your grocery doesn’t sell it, but there is a thing called Amazon and you can order it there.
Any good sandwich waits for Duke’s.
Once the cheese has melted, nestle the chicken & cheesy goodness on the bun, with a leaf of lettuce.
Using The BEST Bacon, Ever place a couple of slices on top.
Oh my, yes, honey!
Now, we’ll top with BBQ sauce. Because we can.
Use your favorite brand of BBQ sauce!
How do you make leftover chicken taste good?
Sauce. Add some sauce to leftover chicken and it changes the flavor.
Really layer it on there, folks.
You want this dripping down your fingers and hands while you’re eating this bad boy.
Finally, flip the tops on, and take a big bite!
