But! For me, this recipe has all the components I crave in a breakfast dish.

Then, it’s got a creamy sausage mixture. Years ago, in my hometown of Asheville, NC a local restaurant served “stuffed French toast.” It was stuffed with sausage, cream cheese, and cheddar cheese for a sweet and savory combo.

This casserole is a nod to that! When you mix tangy cream cheese into savory breakfast sausage you get a great thing!

​Then, you’ll scramble up some eggs with a little milk and pour that over the sausage and bread.

If you want a big Christmas morning breakfast, you can double this recipe for a large casserole dish!

Hand grate some sharp cheddar cheese, and add that to the casserole dish. I love having cheese in an egg casserole recipe. Your girl does not like eggs, but mix them up with cheese and bread and sausage and sour cream?! I’m in.

The BEST Breakfast Casserole is an easy breakfast casserole recipe that has sausage, eggs, cheese, and sour cream! It’s perfect for a holiday breakfast or any brunch!


  • 1 lb. Breakfast Sausage
  • 4 ounces of Cream Cheese
  • 3 cups Bread Cubes (About 56 slices, or 6 Hawaiian rolls!)
  • 8 Eggs
  • 1/2 cup Milk
  • 8 ounces Shredded Cheddar, divided
  • 4 ounces Sour Cream
  • 1 10.5-ounce can of Cream of Mushroom Soup


  1. Brown your sausage over medium-high heat until crumbly and cooked through.
  2. While your sausage browns, rip up your bread into a greased casserole dish.
  3. Add in the 4 ounces of cream cheese stir to melt the cream cheese, and incorporate.
  4. Pour the cream cheese and sausage mixture over the bread.
  5. Top with 3/4 of your 8 ounces of shredded cheese.
  6. Scramble up your 8 eggs and 1/2 cup of milk, and pour over the sausage and cheese.
  7. In a separate bowl, whisk cream of mushroom soup and sour cream together, then pour over the egg mixture.
  8. Top with the remaining cheese.
  9. Bake at 350˚ for 35-45 minutes, or until the middle is set.
  10. Let it rest for a few minutes before digging in and serving!


You can make this the night before, and bake in the morning. I recommend baking in a water bath for a custardy texture!
