The BEST Breakfast Casserole is an easy breakfast casserole recipe that has sausage, eggs, cheese, and sour cream! It’s perfect for a holiday breakfast or any brunch!

- 1 lb. Breakfast Sausage
- 4 ounces of Cream Cheese
- 3 cups Bread Cubes (About 5–6 slices, or 6 Hawaiian rolls!)
- 8 Eggs
- 1/2 cup Milk
- 8 ounces Shredded Cheddar, divided
- 4 ounces Sour Cream
- 1 10.5-ounce can of Cream of Mushroom Soup
Instructions
- Brown your sausage over medium-high heat until crumbly and cooked through.
- While your sausage browns, rip up your bread into a greased casserole dish.
- Add in the 4 ounces of cream cheese stir to melt the cream cheese, and incorporate.
- Pour the cream cheese and sausage mixture over the bread.
- Top with 3/4 of your 8 ounces of shredded cheese.
- Scramble up your 8 eggs and 1/2 cup of milk, and pour over the sausage and cheese.
- In a separate bowl, whisk cream of mushroom soup and sour cream together, then pour over the egg mixture.
- Top with the remaining cheese.
- Bake at 350˚ for 35-45 minutes, or until the middle is set.
- Let it rest for a few minutes before digging in and serving!

You can make this the night before, and bake in the morning. I recommend baking in a water bath for a custardy texture!
