Rosemary Cashews

Cashews are such a great, protein packed snack. They are hearty enough where just a small handful is plenty, even though you want to eat more!
Here is a way to dress these babies up…
(I know we are supposed to talk about Three Cocktails to make with Champagne… But, I have no power. Therefore no Internet.)
Take a pound of cashews and drop one tablespoon of olive oil in, mix till coated well. Add a tablespoon of finely minced rosemary and half teaspoon of cracked black pepper. Mix well. Spread on cookie sheet and bake in oven at 350 degrees for about 8-10 minutes. When you smell the nutty-rosemary-goodness, they’re done!

Now, portion them into baggies, 2 tablespoons in each. Keep a bag with you in your purse for when hunger calls!
