Stove Top Beef Bourguignon

Beef Bourguignon made into a simple stove top supper, that is ready in under an hour.

One of my favorite Fall recipes is Beef Bourguignon. I cannot get enough of it! However, the usual recipe makes enough for 10 people, and takes hours… Which is well worth it! I’ve created a simple stove top version, that is perfect for two people, made in under an hour. 

Chunks of beef and carrots are simmered in a stew of onions, beef broth, and lots of wine. I serve this delicious comfort meal over mashed potatoes — some serve it over noodles, or you could even do like the french do, and serve over a slide of toasted bread. To make it a low carb or keto dinner recipe, serve as is! You won’t even miss the extra carbs mentioned above!

Stove Top Beef Bourguignon

Beef Bourguignon made into a simple stove top supper, that is ready in under an hour.

Ingredients

  • 1 pounds chuck beef cut into 1-inch cubes
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup flour
  • 1/2 cup olive oil
  • 1/2 pound carrots, sliced diagonally into 1-inch chunks
  • 1 large yellow onions, sliced
  • 2 teaspoons chopped garlic (2 cloves)
  • 1/2 bottle good dry red wine such as Cote du Rhone or Pinot Noir
  • 1 can (2 cups) beef broth
  • 1 teaspoon fresh thyme leaves (1/2 teaspoon dried)
  • 4 tablespoons unsalted butter at room temperature, divided
  • 3 tablespoons all-purpose flour

Instructions

Toss beef chunks in salt, pepper, and flour.

In a braiser style pot, or dutch over, begin browning beef in olive oil over medium high heat. Be sure to do in batches, and don't crowd the pan.

To the same pan, add carrot and onions slices and brown for a few minutes.

Add beef back in, and top with wine and beef broth.

Place garlic and thyme sprigs in the stew, and simmer, covered, for half an hour on medium high heat. Stirring occasionally. (If the liquid evaporates, add more beef broth)

When beef is tender, turn heat to medium low.

In a small bowl, combine flour with softened butter and add to the stew. Stir in until thick.

Serve over mashed potatoes or egg noodles, or by itself!
