Pot Roast for Two is an easy dinner recipe idea that uses roasted vegetables and beef that is cooked in a 2-quart slow cooker. Perfect for two people!
I love pot roast! I have memories of my mom making it on Sundays after church. She made it in the OLD beat-up pot with lots of potatoes, carrots, onions, and celery all cooked together. It made a ton of food, and we always had leftovers.
Now, as a grown adult, I enjoy making pot roast, but I don’t really enjoy THAT many leftovers! So, I’ve created a recipe for Pot Roast for Two!
A major factor in this recipe and the one like my mother’s – the vegetables are roasted separately in the oven. I’m a fan of texture when I eat, and one of the reasons you don’t see a lot of slow cooker recipes here on Sweetpea is because slow cooker food = mush to me. Everything has the junk cooked out of it, and it’s an easy way to prepare a meal for busy families – but, a single girl who has time to cook meals?! I prefer grilling steak and roasting vegetables.
What do you need for Pot Roast for Two?
- 2 pound Chuck Roast
- Pot Roast Seasoning Packet
- Worcestershire Sauce
- Red Potatoes
- Carrots
- Onions
- Celery
First, you’ll need to get out a 2-quart Crock-Pot – Hi, Y’all! – this little baby doesn’t see a lot of action in my baby kitchen. It doesn’t have fancy bells & whistles, but it works!
Sprinkle in half the pacakge of Pot Roast Seasoning + Worcestershire Sauce + some water. Give it a good swirl around.
Here’s a little peek into my baby kitchen – this is about all the counter space I have. The sink is to the right.
Slice the chuck roast into pieces, so it fits in the baby slow cooker.
Add your sliced chuck roast, and add to the slow cooker. Flip it around a few times so the meat is coated on all sides. Put the lid on, and turn it on. If you’re going away for the day, turn it to low for 6-8 hours. High for 3-4 hours.
Now, let’s roast some veggies!
When you are home from your day, turn your oven up to 425˚ and get chopping your veggies.
Dice up your red potatoes and place them in a bowl.
We’re going to use this olive oil on the veggies – but, any olive oil will work. You can always sprinkle in thyme, rosemary, basil, and garlic if you don’t have this. Or, you could buy your own Herbs de Provence and mix with oil + one bay leaf! This is everything use oil – it goes on everything! It’s great to dip bread in, marinate chicken or steak, and on a salad.
Pour a few glugs over the potatoes, a good couple of tablespoons. We’re adding the other veggies in a second, so it’s okay if you think the potatoes are covered.
Chop onion, celery, and some carrots into the bowl of potatoes. Give a hefty sprinkling of salt and few grinds of black pepper and mix with your hands until everything is well-coated and seasoned.
Lay out your veggies on a sheet pan, and try to make as even a layer as possible.
Place in a 425˚ oven, and let them roast for 20 minutes.
Meanwhile, go check on your beef and see if it’s shreddable.
Remove from the juice and shred using two forks. It doesn’t have to be super shredded – just large chunks! Yum!
Slide the beef back into the pot, along with the roasted vegetables. Stir around to coat in the au jus, and put the lid back on.
Cook it on high for about 10 minutes – just to get everything acclimated. If you’re just really hungry, and can’t wait, you could definitely eat it now.
Finally, using tongs scoop out a bowlful, and ENJOY!
The roasted veggies are not mushy, they have a slightly crisp texture that pairs well with the melty-shredded beef.
In conclusion, while Pot Roast for Two is a meal in and of itself, you could also serve Homemade Biscuits and a nice Everyday Salad on the side.

Ingredients
- 2 pound chuck roast
- 1/2 packet pot roast seasoning packet
- 1 tablespoon worcestershire sauce
- 3/4 cup water
- 4 small red potatoes, diced
- 1 stalk celery, cut into chunks
- 1 medium onion, large dice
- 20 baby carrots
- 1 tablespoon olive oil, such as herbs de provence
- 1 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a two-quart slow cooker, add half the packet of pot roast seasoning, worcestershire sauce, and water and stir up to combine.
- Add in sliced chuck roast, and flip around so it coats each piece of meat.
- Turn the slow cooker on. Cook on low 6-8 hours, high 3-4 hours.
- With half an hour left in the pot roast cooking time, preheat your oven to 425˚.
- Chop up veggies and toss with oil, salt, and pepper in a bowl.
- Roast at 425˚ for 20 minutes on a sheet pan.
- When the beef is shreddable, remove from the slow cooker and shred.
- Place back into the au jus, along with the roasted vegetables, and mix to coat with the sauce.
- Cook for 10 more minutes on high in the slow cooker.
- Serve to yourself and enjoy!
