Keto Broccoli & Cauliflower Pimento Cheese Bake is an easy
one-pot side dish recipe filled with veggies and cheese!
Keto Broccoli and Cauliflower Pimento Cheese Bake is the all-in-one side dish recipe you need your reach on busy weeknights! Steam broccoli and cauliflower together, and stir in pimento cheese, mayo, and a few other ingredients. It’s baked together in the same pot, ready to be served with a Meal Prep Grilled Chicken (or a rotisserie chicken will do fine!).
WHAT IS KETO?

First, what do you need to make Broccoli & Cauliflower Pimento Cheese Bake?
- Broccoli Florets
- Cauliflower Florets
- Pimento Cheese
- Mayo
- Extra Cheese, because well, you can!
I mean, total, this recipe is about 5 ingredients – it really could not be more simple!
If you only have broccoli on hand, just use broccoli.
If you only have cauliflower, just use cauliflower.
Like most of the simple recipe ideas here at Sweetpea, they are a bit ‘DIY.’
To begin, you’ll add your broccoli and cauliflower to a skillet/pan that has a lid. (If you don’t have a lid, grab a cookie sheet and place it on top!)
You’ll add about 3/4 cup of water, and cover to steam over medium heat.
Once the broccoli and cauliflower are tender, you’ll stir in the pimento cheese + mayo mixture.
You’ll need a good Pimento Cheese recipe, and this one is toooooo good. There are very few times I don’t have a jar of it in the fridge, waiting to be spread on anything that sits still.
Once it’s all stirred together, top with shredded cheese, and cover to melt!
You could dump this whole shebang in a casserole dish, and bake it. I just melted the cheese on top by covering and letting it sit until melted.
This is definitely a quick side dish recipe idea! The whole thing maybe takes 15-20 minutes!
It pairs well with a rotisserie chicken breast.

Ingredients
- 3 cups Broccoli Florets
- 3 cups Cauliflower Florets
- 3/4 cup water
- 1 cup Pimento Cheese
- 1 Cup Mayo
- 3/4 cup Shredded Cheddar
Instructions
- In a skillet or pot with a lid, steam broccoli and cauliflower in water over medium heat.
- Once the broccoli and cauliflower are tender, stir in pimento cheese + mayo until fully coated.
- Sprinkle shredded cheese over top, and place the lid on top to melt the cheese.
- Serve with a grilled chicken breast or rotisserie chicken!
