Mexican Layer Dip
Mexican Layer Dip is the make-ahead simple appetizer recipe idea you need for
Taco Tuesdays or any game day tailgate.
If you’ve been to my parent’s home in the last 20 years, you’ve had this dip.
While it’s definitely one of those “old school” recipes you received on a handwritten notecard, it’s *good* for a reason!
This is one of those slap it together the night before you need it, and pull it out and serve while people ooh and ahh over it.
First, how do you make Mexican Layer Dip?
Layer all of these ingredients into a casserole dish, and serve with tortilla chips or fresh cut up veggies!
- Refried Beans
- Guacamole
- Sour Cream (mixed with a package of taco seasoning!)
- Salsa
- Shredded Cheese
- Green Onions (some people like olives!)
Serve with hearty tortilla chips.
Mexican Layer Dip is the perfect appetizer recipe for family gatherings and get-togethers where you need a lot of something, and something to go far!
It’s a super hearty dip, so you’ll need some ‘hefty’ tortilla chips! The “scoop” ones are great, and I actually prefer the big Fritos Scoops!
But, regular tortilla chips will do just fine, just be prepared to go fishing for broken tortilla pieces! ?

For the Wow! version here are my tips:
- Cook your refried beans and thin them out with a little water. This is also helpful for making dipping easier!
- Add a layer of taco-seasoned cooked ground beef for a *super* hearty dip!
- Instead of using shredded cheese, use a quick and easy white queso dip recipe all over the top.
Then, garnish this dip recipe with sliced green onions and whatever else you like!
More garnish ideas:
- Black Olives
- Chives
- Cilantro
Finally, here are some dipper Ideas:
- Fritos Scoops
- Blue Corn Tortilla Chips
- Raw Veggies (Such as carrots, celery, bell peppers, etc)
Serving Ideas:
While this recipe makes a great appetizer, it’s a great taco topper.
Pulled Pork Tacos are made even better when topped with this dip recipe!
Our favorite way to serve is for Chalupa Night!
It’s when we know we’ve got a crowd of people gathering, and we’ll have a big pot of pork chalupas on the stovetop. People can come and go as they please, fill their plates high with whatever they like

Ingredients
- 16 ounces Refried Beans
- 16 ounces Guacamole
- 16 ounces Sour Cream
- One packet Taco Seasoning (or 2 tablespoons)
- 16 ounces Salsa
- 16 ounces Shredded Cheese
- 2 Green Onions, sliced
Instructions
- Spread 16 ounces can of refried beans on the bottom of a casserole dish, followed by a 16-ounce container of guacamole.
- Spread 16 ounces of sour cream that has been mixed with one package of taco seasoning.
- Pour a 16-ounce jar of salsa over top and spread around.
- Top with shredded cheese.
- And snip some green onions over top!
- Serve with tortilla chips or use it to top tacos!
