Champagne Vinaigrette is used with Worcestershire sauce where the pork chops take a little dip. They only need a couple of hours at most to pack the flavor in.

How to Make Champagne Vinaigrette Marinated Pork Chops

First, let’s gather the ingredients we’ll need for this easy pork chop recipe.

You’ll need the Champagne Vinaigrette. It’s a simple salad dressing recipe, like this Prosecco Vinaigrette, but uses champagne vinegar instead.

This simple vinaigrette is the usual suspect of any “French” vinaigrette:

Acid: We’re using Champagne Vinegar here, but you could use white wine vinegar, prosecco, red wine, or even balsamic.

Fat: Olive oil is the choice of salad dressing fat. But, you could use something with a neutral flavor like vegetable oil, if you’re into it.

Mustard: You want the mustard to emulsify everything together. A hearty Dijon mustard binds everything together and keeps the herbs suspended without letting them fall to the bottom with every pour.

Herbs: I love using dried Tarragon or an herb blend like Parisian Herbes from Penzey’s Spices.

Sweetener: I love using Maple Syrup in this dressing recipe, with its autumnal notes that complement the full recipe so well.

Other additions: Finely diced shallots, you can also use dried shallots if you have them. Shallots are in the allium family, and give a great onion flavor to anything they touch!

Mixing Up This Simple Marinade

So, you’ve got your salad dressing.

For every four pork chops, we’ll use 3/4 cup of the dressing and 1/2 cup of Worcestershire Sauce.

It sounds like a lot, but you want to pack the flavor in, so you can do a quick marinating time.

Just pour the dressing and W sauce over the pork chops in a container, and flip them around to coat evenly.

Let them hang out, covered, in the fridge for 1-2 hours.

When you’re ready to grill, remove them from the fridge half an hour before so the chill comes off.

Grilling Juicy Pork Chops

Preheat your grill to 400 degrees. If you’re using a gas grill, this is medium-high heat.

Allow your grill to heat for a good 10-15 minutes, so it’s really hot and ready for the pork chops.

Next, you’ll remove the pork chops from the marinade, and give them a gentle pat with a paper towel to remove any excess marinade.

Lay them onto the hot grill, at 2 pm, and let them cook, with the lid of the grill open. Grill for 3 minutes with the lid open.

After 3 minutes, turn your chops to 10 pm, and close the lid. Allow to cook an additional 2-3 minutes to get those grill marks we all know and love.

Open the grill, flip the chops over, and close the lid. Grill for 4 minutes, depending on the thickness of your pork chops.

These pork chops aren’t extra thick, just under an inch.

CHAMPAGNE VINAIGRETTE

  • 1/4 cup Champagne Vinegar
  • 2 TBS Diced Shallots
  • 1 TBS Maple Syrup
  • 1 TBS Dijon Mustard
  • 2 tsp Dried Tarragon
  • 1/2 tsp Kosher Salt
  • 1/4 cup Extra Virgin Olive Oil

PORK CHOP MARINADE, for every 4 Pork Chops:

  • 1/2 cup of the Champagne Vinaigrette
  • 1/2 cup Worcestershire Sauce

 


Instructions

  1. In a salad shaker, mix up the vinaigrette.
  2. Pour 1/2 cup of the vinaigrette over the pork chops and 1/2 cup of Worcestershire sauce.
  3. Flip the chops around and coat evenly.
  4. Marinate for 1-2 hours, covered, in the fridge.
  5. 30 minutes before grilling remove from the fridge.
  6. Preheat your grill to 400 degrees, or medium-high heat.
  7. Pat the chops dry with a paper towel.
  8. Place the chops down at 2 pm on the hot grill, and leave the lid open for a 3-minute cook.
  9. After 3 minutes, turn the chops to 10 pm, close the lid, and grill for an additional 2-3 minutes, to get those yummy grill marks.
  10. Flip the chops over and grill for an additional 4 minutes, depending on how thick your chops are.
  11. Once the chops are cooked to your preference remove them from the grill and let them rest for 5 minutes before serving.
