Heck! It’s good any season! But, with all the fresh produce popping up, you’ll want this dressing recipe in your fridge at all times.

I love a wedge salad! It’s one of my favorite things to eat in a restaurant.

When I’m in a restaurant, and they have wedge salad on the menu, I’m ordering it.

No, there are very few “exciting takes” on the salad recipe, but I can tell you all about the ones that are memorable.

One of those is a Wedge Salad with Thousand Island Dressing.

  • Romaine Lettuce
  • Salad toppings
  • Thousand Island Dressing.

Simple, right?!

Ideas for Salad Toppings

  • Tomatoes
  • Cucumbers
  • Carrots
  • Onions (like sliced shallots, green onions, chives, etc)
  • Croutons
  • Bacon
  • Cheese
  • French Onions

Seriously, the possibilities are endless.

If you’re wanting this to be a side dish, keep it minimal.

However, you could very well have a full meal off of this salad by piling it high with all the toppings!

What a way to use your summer produce!

First, let’s make the dressing

To your big mixing bowl, you’ll add all the dressing ingredients, whisking it up really well. Taste it for salt and pepper… Pour into an airtight jar, then, let it sit in the fridge for an hour before trying it again.

I like to dip a plain lettuce leaf into the jar! That way I know if I need a little more of this or that to really make the dressing sing!

Now, let’s assemble the salad

Here’s where you get to use your creative genius and assemble your salad however you prefer!

Place your lettuce disc onto a plate.

Top with all the toppings YOUR heart desires!

I prefer tomatoes, cucumbers, French onions, bacon, and homemade croutons!

Thousand Island Wedge

Once again, this is definitely a mix-and-match kind of deal.

Anything you like, add to your wedge salad!

What you don’t like, leave off.

Ingredients

  • Measurements are not included...choose how much you want, and add it to the disc of lettuce!
  • Iceberg Lettuce, cut into discs about an inch thick
  • Thousand Island Dressing (recipe to follow)
  • Croutons
  • Tomatoes
  • Shredded Cheddar Cheese
  • Cucumbers
  • Bacon
  • Any other salad toppings you'd like
  • Thousand Island Dressing Ingredients:
  • 1 cup Mayo
  • 1/2 cup ketchup
  • 2 TBS Sweet Relish
  • 1.5 TBS Shallots
  • 2 tsp Worcestershire Sauce
  • 1 tsp lemon zest
  • Juice of one lemon
  • Salt and Pepper to taste

Instructions

  1. Remove the outer layer of lettuce from the iceberg lettuce, and then remove the core.
  2. Slice the iceberg lettuce into discs about an inch thick.
  3. Place on a. plate
  4. Spoon Thousand Island Dressing over top, followed by salad toppings.


Thousand Island Dressing

1. Mix all ingredients together and allow to sit for an hour before serving.

    1. I’ve had mine in my fridge for three weeks, and it’s been fine! I probably wouldn’t go too much over that!
