Mandarin Orange Slaw-lad
You know that 90s classic, the Mandarin Orange Salad??! My mom used to make this all the time! Especially for church functions, showers, nice luncheons, etc. We LOVED it as kids — and I forget about it with all the “new” salad recipes on Pinterest.
Years ago a dear friend showed me her “5 Minute Salad” — where you take spinach and coleslaw, combining them with a few other ingredients and a simple dressing and you have a salad. In five minutes, tops.
I loved the mix of textures with the super crunchy cabbage and leafy lettuce that I use this “method” all the time now. I call it Slaw-lad. It holds dressing like a slaw, yet isn’t quite as “rough” with the added green lettuce. I’ll add extra shredded carrots and “fun” things to create a new salad.
I took the usual ingredients for Mandarin Orange Salad, and added the extra shredded carrots + coleslaw mix. If you added a piece of grilled chicken or steak on top, it would be an awesome summer time dinner idea!

Salads to me are the perfect summer dinner idea, it keeps your house cool, it’s mostly assemble ahead of time ingredients, and it’s healthy!
Healthy salad recipes are always fun to use during the summertime. Pack these in a picnic and take to the pool!
Mandarin Orange Slaw-lad
Ingredients
- 1 head Romaine, chopped
- 4 cups shredded Cole slaw mix
- 1 cup shredded carrots
- 1 cup sliced cucumber
- 1 can mandarin oranges, drained
- 1/2 cup smoked almonds, chopped
- 1 cup crispy shallots
Dressing
- 1/2 cup balsamic vinegar
- 2 tbs sugar
- 6 drops hot sauce
- 1 tbs chives (fresh or dried!)
- pinch of salt
- pinch of pepper
- 3/4 cup olive oil
Instructions
- Add lettuce, coleslaw, and carrots and toss well. Add cucumber, orange slices, almonds, and shallots on top. {To keep it pretty, don’t toss!}
- Combine all dressing ingredients in jar, and shake well. Pour over salad when ready to serve, or serve on the side!
Now you are summer time salad ready!
