Keto Italian Pizza Zucchini Bake is one of those you have leftovers in your fridge plus you need a super easy meal that can be made in one skillet. If you have grilled chicken, zucchini, onions, cheese, and some other items you have supper in a matter of minutes!
Here’s how to make it…
First, in a cast-iron skillet like this one, add a couple of teaspoons of olive oil and some diced onions. Let the onions get soft over medium heat if they happen to get some color that’s okay.
Once your onions are slightly soft, go ahead and dump in some cut up zucchini. Let them get all cozy and comfy with the onions. Sprinkle a little salt and pepper in with them. At this point, you can walk away for a minute or so. I like to add color to my veggies, the caramelization of the sugars creates a fun ride in flavor town, and you’ll definitely want to be on it!
This is the lengthiest process – it should take about 8 minutes, and you’ll maybe stir the zucchini and onions a few times. While this is going on, you can chop up your leftover grilled chicken. You can’t see it very well, but whenever I cut anything, I use these plastic “shields” and it’s super handy to wash off. It’s especially handy when cutting/preparing raw meat of any kind. It’s flexible, so you can also lift it up and plop it into your skillet, pot, or baking dish. Dice up the leftover chicken breast.
Next, dump the diced up chicken and sprinkle with Italian seasoning. Stir this around and let the chicken warm through.
QUICK LOW CARB TIP…
Did y’all know Rao’s sauce is low carb?! It’s simple ingredients and by far the best store-bought sauce out there! You can order Rao’s sauce on Amazon, and purchase in the store. Occasionally it goes on sale, and when it does, be sure to stock up! I use this as a pizza sauce with naan bread and mozzarella cheese!
Then plop a good portion on top of everything. This is maybe a cup and a half? It’s half of the jar. You’ll want to stir this around and heat it up. In the end, we’ll place this whole skillet in the oven, under the broiler. So, having everything warm and happy before adding the cheese and pepperonis will help speed this process up. Remember, red sauce randomly bubbles up, and bubbles up largely! It can pop and go all over the place. Be careful!
Top the heated zucchini, onions, chicken, and red sauce with mozzarella cheese. I added some red pepper flakes because I like a little added heat in my Italian food. That’s why my Angry Lasagna is angry – it’s got lots of red pepper flakes, smokey cheese, and fire-roasted tomatoes.
Now, top the whole skillet with pepperoni. You could top with any kind of pizza toppings you want!

Finally, plop this whole skillet under the broiler and let it get all brown and crispy. I have a very old stove and oven. So, the broiler is quite hot – I usually leave the door cracked and watch it super closely. It’s a super fun process to watch, quite magical!

Y’all, it’s so good! Cheesy and creamy, protein and veggie-filled, and low carb and keto-friendly. Don’t just limit this to zucchini, either. You could throw in all kinds of vegetables you need to use up. Squash, broccoli, asparagus, kale, collards, etc. Any and all of it would be delicious!

Ingredients
- 2 teaspoons olive oil
- 1 medium onion, chopped
- 2 small zucchini, chopped (about a cup or so)
- 1 cup diced grilled chicken breast
- 1 teaspoon italian seasoning
- 1 cup Rao’s marinara sauce
- 1 cup mozzarella cheese
- 12 pepperonis
Instructions
- Over medium heat, in a cast-iron skillet, heat the olive oil and begin sauting the onions until just starting to soften.
- Add zucchini and cook until a little color comes to the vegetables, and the zucchini cooks through.
- Add diced grilled chicken and italian seasonings. Stir to combine and heat through.
- Pour Rao’s marinara sauce over top and stir to combine and heat through.
- Top with mozzarella cheese and pepperoni.
- Broil under your oven’s broiler until the cheese has melted and the pepperoni are crisp.
- Serve to your people and enjoy!
Notes
You can sprinkle in some red pepper flakes, if you like a tinge of heat.
