This easy one-pot meal will have your people gathered up around your table in 30 minutes, ready to enjoy a great recipe.

How to Make Easy Chicken with Yellow Rice Skillet

First, let’s gather the ingredients you’ll need:

Chicken – you could use fresh chicken breasts, chicken thighs, rotisserie chicken (turning this meal out even faster!), or any leftover chicken you have.

Yellow Rice – I chose a cheap yellow rice mix from the grocery store. I’ve never made my own yellow rice or saffron rice, and these little packets are so helpful! You might also see Zatarain’s Yellow Rice, it’s delicious in this, too. I find these in my “Mexican” aisle and keep them on hand for a quick dinner side dish.

Yellow Onion – I sliced up a yellow onion for this dish. Do you need it? Nope! Not at all. It just added some extra flavor, and I had half an onion I needed to use up.

On this note, if you have some extra veggies in your fridge you need to use up, slice them into this casserole dish! Bell pepper, green beans, anything!

Green Chiles – I love these little cans of chopped green chilies. It’s an amazing flavor booster you can add without adding too much heat. I have started using a Walmart+ membership, and in this grocery delivery, I got a “medium” spiced green chili can. Having that extra spice was just what I needed! It really added lots of extra flavor.

Taco Seasoning – Just a plain envelope of taco seasoning! Next time I make this, I will only use half the envelope or one and a half tablespoons. It ended up being too salty with the yellow rice recipe. In the printable recipe card below you’ll find the adjusted recipe.

Taco Toppings – lay out all the taco toppings you know and love! Sour cream, shredded cheese, salsa, guacamole, shredded lettuce! Whatever you and your family like best, put it on the table. 

Cooking this Yellow Rice Casserole

You’ll brown your cut-up chicken and onions together in a skillet with olive oil over medium heat. I love using my cast iron skillet so you get a really nice browning on your chicken and onions.

Once your chicken is browned, add in the diced green chilis and taco seasoning. Mix this around to spread it out.

Pour in your yellow rice mixture and add either water or chicken broth to the skillet.

One thing you’ll want to make sure of is that all the rice is fully submerged in the skillet. I used the measurements for water from the back of the rice bag.

​You could definitely use chicken broth if you want to! Use low-sodium or salt-free broth. The taco seasoning is pretty salty, so you’ll want to use something with less salt and season it to taste if you need to later! Vegetable broth would also work well!

The cooking time needs to be 25 minutes! After the 20-minute timer, my rice wasn’t fully cooked through. It had a bit of a “bite” to the rice, and I like soft rice!

​While I have not tested and tried this, you could toss all of these ingredients into a baking dish and cook a creamy casserole! I would probably do this if I was using rotisserie chicken!

Another question you might have is can you use regular long grain rice with this? Sure! That would definitely work!

​Serving this Easy Dish

When your rice is cooked, and everything is ready, give the whole rice bake a bit of a mix. 

Spoon out onto shallow bowls, and top like a taco!

I put our shredded cheddar cheese, sour cream, salsa, shredded lettuce, hot sauce, etc. If you have some guacamole, that would be delicious in this! Green onions always add a bright flavor and an enticing green color to the top of the rice dish. 

You could of course add in the cheese and let it melt over top for a super cheesy chicken skillet meal! 

This skillet chicken and yellow rice meal is the ultimate comfort food, and it’s so nice it comes together in under half an hour. 

If you end up with leftovers, store them in an airtight container for up to 3 days. The next day, just heat in the microwave and eat!

  • 2 Chicken Breasts, cut into bite-sized chunks
  • 1/2 medium Yellow Onion, sliced
  • 2 TBS Olive Oil
  • 4.5-ounce can of Green Chilies
  • 2 TBS Taco Seasoning
  • 5-ounce bag of Mahatma Yellow Rice
  • 1 1/2 cups Water (or low-sodium chicken or vegetable broth)
  • Taco Toppings 


Instructions

  1. In a skillet, brown your chicken and onions in 2 tablespoons of olive oil over medium-high heat until cooked almost through.
  2. Add in your 4.5-ounce can of green chilies, the 2 tablespoons of taco seasoning, the 5-ounce bag of yellow rice, and 1 1/2 cups water to your chicken and onions.
  3. Stir everything to combine, and submerge the rice under the water.
  4. Cover and cook for 25 minutes, stirring occasionally to keep from sticking.
  5. Once the rice is cooked, give a little fluff and serve with taco toppings!
