- 2 Chicken Breasts, cut into bite-sized chunks
- 1/2 medium Yellow Onion, sliced
- 2 TBS Olive Oil
- 4.5-ounce can of Green Chilies
- 2 TBS Taco Seasoning
- 5-ounce bag of Mahatma Yellow Rice
- 1 1/2 cups Water (or low-sodium chicken or vegetable broth)
- Taco Toppings
Instructions
- In a skillet, brown your chicken and onions in 2 tablespoons of olive oil over medium-high heat until cooked almost through.
- Add in your 4.5-ounce can of green chilies, the 2 tablespoons of taco seasoning, the 5-ounce bag of yellow rice, and 1 1/2 cups water to your chicken and onions.
- Stir everything to combine, and submerge the rice under the water.
- Cover and cook for 25 minutes, stirring occasionally to keep from sticking.
- Once the rice is cooked, give a little fluff and serve with taco toppings!
