Have y’all tried the Viral TikTok Twisted Bacon!?

I can’t stop making bacon this way!

This method is V Aunt Bacon approved! ✅

It’s simple:

1️⃣ Cut your bacon strips in half.
2️⃣ Twist each piece over and over.
3️⃣ Place on a sheet pan, giving it a little smoosh to keep it’s shape.
4️⃣ Place in a COLD oven, then turn it on to 350*.
5️⃣ Roast for about 20-30 minutes, depending on how full your pan is!

🥓 You’ll end up with crispy + chewy bacon that is over the top delightful!

First, I’m dreaming of Saturday morning brunches with friends gathered around the table!

Champagne freely flowing…🍾

Why not give this SUPER Easy Keto Egg Bake a try?!

Here’s what you need:

🥓 Sausage (Bacon works too!)
🧅 Onions
🥚 Eggs
🧀 Cheese
🥛 Cream
🧂 Salt & Pepper

✅ If you’re a planner, go ahead and brown the sausage and onions the night before. Store in the fridge until the next morning. You can also mix up your eggs, cream, cheese, salt, and pepper and store those too!

🥣 When you’re ready to “cook” pour the sausage + onions into a baking dish, followed by the egg mixture.

Bake at 375˚ until golden brown on top! (For me, that’s about 25 minutes! Your oven may vary!)

On your table with fresh OJ + 🍾 add tomatoes and avocados to top your egg bake!

Today is the day to make this Grilled Corn and Black Bean Salsa.

This is a 5-minute salad recipe that pairs perfectly with salty corn chips! 🌽🍅🌶🥑

𝗚𝗿𝗶𝗹𝗹𝗲𝗱 𝗖𝗼𝗿𝗻 𝗮𝗻𝗱 𝗕𝗹𝗮𝗰𝗸 𝗕𝗲𝗮𝗻 𝗦𝗮𝗹𝘀𝗮 (𝘁𝗵𝗮𝘁 𝗰𝗼𝘂𝗹𝗱 𝗿𝗲𝗮𝗹𝗹𝘆 𝗯𝗲 𝗮 𝘀𝗮𝗹𝗮𝗱!)
4 corn cobs, grilled and kernels removed
1 can black beans, rinsed and drained
1 can Rotel tomatoes, drained (or a couple of fresh tomatoes!)
1–2 avocados, diced
1 lime, juiced

1️⃣ In a dry skillet over high heat, lay corn cobs flat, and rotate often to brown each side. If grilling, place on a grill over high heat, and brown each side.

2️⃣ In a bowl mix black beans, Rotel (or diced fresh tomatoes!), avocado, corn, and the juice of one lime until well combined.

3️⃣ Serve as a side dish, or with tortilla scoops.

Are you rushed off your feet?

It’s Monday, and we’re nearing the end of April — Can you believe it?! 😱

While this spring may feel different, it doesn’t mean it can’t be filled with good food!

Bring leftover grilled chicken to life with a garlicky, tomato salad. 🧄

Yep! That same grilled chicken from Sunday afternoon!

This is the same tomato salad that I use on Bruschetta — and it’s quite the dish!

TOMATO SALAD:

2 cups cut up tomatoes
3 garlic cloves, minced (I grate mine over my microplane)
1 shallot, finely diced
2 TBS red wine vinegar
1 TBS capers (with the brine)
Fresh basil, to taste

Mix all these up REALLY well, so the garlic and shallots distribute well. Allow to chill in the fridge for an hour before serving on grilled bread, or over grilled chicken! This is also delicious tossed with mozzarella pearls for an unbelievable caprese salad.

With another busy week starting tomorrow, I’m grilling up some chicken!

The grilled chicken will be used in all kinds of ways this week!

Starting with Keto Italian Pizza Zucchini Bake…

Tomorrow evening, I’ll sauté up some zucchini and onions, and add in the grilled chicken.

Top it with marinara, mozzarella cheese, and pepperoni for a super simple, quick, and easy Monday night meal!

Y’all know I’m not a leftover eater…this is how I do leftovers.

And! This is one of the recipes you’ll need to save for when your garden picks up and starts delivering all the zucchini!

This weekend was spent on a Virtual @tastemakerconference, and while it wasn’t the same as an in person one, I did feel like inspiring motivation to #makethingshappen! 🎉

I know I’m looking forward to finally putting together the shelf I purchased for a closet that I’m calling “Monica’s Closet.”

It’s the closet I’ve been tossing all the “I don’t know what to do with this” items into...and well, it looks like Monica Gellar’s locked closet. IYNYK.

So, yall! Don’t forget to practice some #selfcare and feed yourself a *good* meal! 🥰

You know, like take a break from eating at your desk, in front of the screen!

I always forget just *how* good this salad is...

The tangy but sweet dressing with the crunchy fresh broccoli, along with the spicy shallots...it’s a marriage made in heaven! 🤩

Best part... You can make all the components ahead of time! 😱🥳

Here’s your action plan:

🥓 Roast up some crispy bacon
🥦 Chop your broccoli into bite sized pieces
🧅 Slice your shallots
🧀 Grate your cheese
🥣 Mix your dressing

An hour before serving time, plop it all into a bowl along with some dried cranberries and mix, mix, mix, mix, mix.

Be sure to put it back in the fridge to let everything get happy! 🥰

In true Asheville fashion it’s COLD! 🥶

But, that can’t stop you from having a delicious Easter dinner this weekend! 🥳

On Saturday, go ahead and mix up this Deviled Potato Salad, so it’s ready to go when you are on Sunday!

If you like egg salad and you like potato salad, you’ll L-O-V-E this version.

It’s like egg 🥚salad and potato 🥔 salad got cozy together and had a baby!

The zingy secret is once your cut up potatoes are cooked through on the stove stop, pour them into a colander. Shake white wine vinegar overtop the potatoes (still in the colander!) and cover with a clean dish towel, letting them hang out.

The potatoes will absorb the vinegar and give an extra umami punch you didn’t know you were missing all along!
