Salmon Niçoise Salad is extremely versatile and can be made to accommodate any palette.
What is in Salmon Niçoise Salad?
There are all kinds of varieties of this salad!
Here are the usual components:
- Boiled Potatoes
- Green Beans
- Hard-boiled Eggs
- Fresh Herbs
- Dijon lemon dressing
Really, anything goes here! This is a great way to clean out your fridge of the fresh produce that might be wilting slightly!
Here’s how to make Niçoise Salad –
You’ll need some sort of fish option — I had leftover Baked Lemon Pepper Salmon that I used in my salad recipe.
Boil up some New Potatoes — below you’ll find a guide to boiling all.the.things that go on a Niçoise Salad!
Boil and shock some green beans!
Pickle some shallots – or any onion you have on hand!
Boil some “Jammy” Eggs – the Seven Minute Egg everyone goes nuts over!
Slice up some grape tomatoes to keep with the Niçoise theme.
Add some EXTRA to a bottled dressing — I added dijon mustard and lemon juice to this Garlic Vinaigrette.
Drizzle your dressing over the entire thing, and serve extra on the side!
How do you pronounce Niçoise??
What does Niçoise mean??
It means “cooking in the style of Nice, France.” Which usually means anchovies, olives, tomatoes, and garlic.
How do you boil all.the.things?!
In a large pot, filled with cold water + a handful of salt, add a pound of new potatoes.
Potatoes cook more evenly when they ‘come up to temperature’ with the water, as opposed to dropping them in boiling water and waiting.
Next, when the water starts to boil, add some eggs in their shells to the water.
Gently add the eggs a couple at a time, using a spoon — so you don’t plop one in and it breaks.
Set a timer for 7 minutes.
This should be about the same time as the potatoes take to cook — but, we’re boiling all the things together to make it SUPER SIMPLE!
Once the timer stops, retrieve the eggs and plop into a big bowl filled with COLD water and ice.
While the potatoes finish boiling, you can drop your fresh haricots verts, or french green beans into the water.
Wait about a minute and a half, and then remove the green beans.
Place the green beans in the cold water + ice bowl with the eggs, and allow to shock.
Drain your potatoes, and let them hang out in the colander while they cool.
All of this boiling can be done 2-3 days ahead of time.
Boil everything up, and place in air-tight storage containers until you’re ready to use them.
You can now begin to assemble your salad.
While everything is cooling, flake up your salmon, and add it to a bed of lettuce.
What kind of lettuce works well with Niçoise Salad?
Whatever you have on hand!
- Butter Lettuce
Cut up some grape tomatoes, and toss them with salt and pepper.
Put all the ingredients on top of lettuce leaves, and place in big piles.
Guests will pick and choose what they want for their individual plate, so no need to toss it all together.
How long does this last in the fridge?
I wouldn’t let this go past a couple of days as leftovers.
You can, however, make this salad up in the morning, leaving the dressing off, covering in plastic wrap and storing in the fridge until you need to serve.

- 2 cups Flaked Salmon Fillet (if using canned, this is about 2 cans!)
- 2 cups Cooked New Potatoes
- 2 cups Cooked Green Beans
- 1 cup Sliced Grape Tomatoes
- 1/2 cup Pickled Shallots
- 4 Jammy Eggs, sliced in half
- 3/4 cups of Lemon-Garlic Dressing
- Follow this Lemon Pepper Salmon recipe – and let it cool.
- Boil all the potatoes, eggs, and green beans, and allow to cool.
- In a little bowl, add sliced shallots with a sprinkle of sugar and a hefty douse of Vinegar. Let these sit to quick pickle.
- On a giant platter, lay out your lettuce leaves.
- Top with flaked fish, potatoes, green beans, eggs, onions, and tomaotes in piles all over the lettuce.
- In a small bowl, pour almost a cup of dressing. Add a tablespoon of dijon mustard, and the juice of one lemon.
- Drizzle the dressing over everything, leaving extra to serve on the side.
The potatoes, green beans, and eggs can be boiled a few days in advance.
The salmon can be made the night before. ((A great way to use up leftover salmon!))
