Pimento Cheese

I have a couple pimento cheese recipes on here, that are not like the traditional version. But! Since it’s Tailgating Season, and we all need a list of go to snack foods, I thought I would share my version of the southern classic. And I do not take the phrase “the best pimento cheese recipe, ever” lightly… That is a bold, BOLD statement to make.

But, it’s the truth, y’all!

Pimento Cheese requires a few essential things:

  1. Good, freshly grated cheddar

  2. Duke’s Mayo

  3. Mt. Olive Roasted Red Peppers

While I love the little jars of pimentos, I would rather dice up some roasted red peppers for not only a different flavor, but the pepper pieces hold up better & longer. The flavor of Mt. Olive’s roasted red peppers “juice” in the jar is a major secret to this recipe. <—– MAJOR! 

Another absolutely, hands down, you can’t use anything else but this brand ingredient is DUKE’s Mayo. Now, if you aren’t near the Mason Dixon line you may not know what I am talking about… But, just get on the internet and order yourself some mayonnaise. It is my childhood in a jar. Something so simple is incredibly sentimental to me. Toni makes the best sandwiches, like her tuna salad, and every time I open one of these mayo jars I think of her. 

 

Pimento cheese recipe that uses Duke's mayo and roasted red peppers.

Good sharp cheddar is also essential, however it’s not really the brand of cheese. You don’t need to get it out of the “fancy cheese” section. However, you do need to grate it by hand! Do not, I repeat, DO NOT use the bagged stuff. No. Please, just no. You’ll need to work off some calories after eating this, why not go ahead and burn them before eating?!

Ingredients

  • 12 ounces sharp cheddar cheese, hand grated
  • 1/2 cup diced roasted red peppers
  • 1/4 cup sliced green onions
  • 1/2 cup Duke's Mayo
  • 2 tablespoons Red pepper brine
  • 4 ounces room temperature cream cheese
  • 3 teaspoons Worcestershire sauce
  • 1 teaspoon Cayenne pepper
  • salt & black pepper to taste

Instructions

Grate cheddar and dump into a big mixing bowl

Add diced peppers and sliced onions

Throw in the rest of the ingredients, except the salt & pepper, and mix well. (Don't use a stand mixer or food processor for this! You want everything to stay "as is.")

Taste to see if salt & pepper are needed.

Chill for a few hours before serving.

Keeps for a week in the fridge, in a closed container
