Pimento Cheese Corn Dip!

Yum Yum Yum!

I love Pimento Cheese, y’all should know that.

For starters, I’m from the South. We are raised on it.

Secondly, it has cheese.

Thirdly, it has bacon.

Need I say more??

This dip is a combo of a few dips.

This easy dip combines every ones favorite characters:

Cream cheese, cheddar cheese, pimentos, Rotel, corn, and bacon. Woo Hoo! Bring on the work out!

Here’s the easy recipe:

Start with a black of cream cheese, softened to room temperature, add in two cans of whole kernel sweet corn, a can of Rotel, a small jar of pimentos, and 1 cup of pimento cheese. I make my own, but you could certainly use store bought — just be sure it’s your favorite store bought!

Chopped up a few pieces of bacon and a couple tablespoons of chives. Add those into the cheesy corn mix!

Dump into your chosen vessel — I used a ceramic baking dish, that is close to a 9×13 size.

Bake at 350˚ for about 20-25 minutes, until brown and bubbly!

I like to serve with warmed tortilla chips. Would also be great with pretzel thins, toasted baguette rounds, or celery.
