Grilled Paleo Tacos

It’s Spring!

It’s warm outside!

And it’s time to start using the grill every day.

This past winter was unusually warmer, so I used the grill quite often. But, there is something so great about grilling and the sun setting.

These tacos are a great dinner, but they also make a perfect appetizer. Super, super easy to make!

Grilled Paleo Beef & Veggie Tacos

1 Sirloin Strip 
1 Zucchini
1 Squash
Tomatillo Salsa
Butter Lettuce

Marinade your steak in 1/2 cup of salsa overnight, if you can. But, at least an hour. Grill over medium high heat, until your desired “doneness.” Mine would be medium rare. MOOOOOOO.

Slice your zucchini and squash thin, length wise. Toss in olive oil, salt and pepper. Grilled over medium heat. 

Add a couple pieces of beef, along with a few pieces of veggies  to a piece of butter lettuce and top with more salsa. 

You will LOVE these! Super quick and easy dinner that is both satisfying and fulfilling.

If you aren’t into the whole Paleo eating style, put these babies into a real tortilla! Or, serve over rice with some black bean salsa. YUM.
