Description
Crustless Cheesy Ham Quiche is a deliciously simple breakfast or lunch recipe that is filled with cheddar cheese and leftover ham. It’s a great way to meal prep for the week or serve a hearty dish the whole family will love.

- 6 Whole Eggs
- 1/2 cup Heavy Cream
- 1/2 cup Milk (any % will do)
- 1 1/4 cup Shredded Cheddar Cheese, divided
- 1/2 tsp Kosher Salt
- 1/2 tsp Black Pepper
- 1/2 cup Chopped Rosemary Ham (any chopped ham will do!)
Instructions
- Preheat the oven to 350 degrees.
- In a large mixing bowl whisk the six eggs, half a cup of heavy cream, and half a cup of milk until well combined and the eggs and milk are pale in color.
- Add in half a teaspoon of salt, half a teaspoon of pepper, and one cup of shredded cheese. Mix to combine.
- In the bottom of a sprayed pie dish, distribute the chopped ham on the bottom.
- Pour the egg mixture over the ham, and once all the custard is in the dish, give it a little jiggle to redistribute.
- Top the quiche with the remaining quarter cup of cheese, then bake at 350 degrees for 30 minutes.
- When the quiche is golden brown on top, and the very center jiggles slightly, the quiche is done.
- Allow the quiche to rest for 5-10 minutes before slicing and serving.
Notes
- You can use any kind of cheese you prefer! Gruyere or swiss cheese would be lovely.
- Any leftover ham makes a great addition. Substitute bacon as well.
- If you want to make this ahead of time, store the egg + cheese mixture in a measuring jug with plastic wrap on top in the fridge. I like to store the chopped ham in a separate container. When you’re ready to bake, just assemble and bake according to the instructions above.
