Dinner parties can change the world — even the quiet, February kind. 💗
If you’ve never made homemade granola before, le If you’ve never made homemade granola before, let me gently convince you.

It’s cozy. 
It’s flexible. 
It makes your kitchen smell unreasonably good. 

🥣 This is my go-to, big-batch granola — perfect for yogurt bowls, snacking by the handful, or gifting in a pretty jar.

✨Sweetpea’s Homemade Granola

You’ll need:
• 8 cups rolled oats (old-fashioned, not quick cooking)
• 2 cups coconut chips
• 1¼ cups nuts (I use a no-salt mixed nuts jar)
• ⅔ cup honey
• ⅔ cup maple syrup
• ½ cup coconut oil
• 1 tsp cinnamon (optional but cozy)
• 2 cups dried mixed fruit (I love the fruitcake blend from King Arthur Baking Co.)
• 1 tsp Maldon salt

Here’s how I make it:
1️⃣ In a very large bowl, dump in the oats, coconut chips, and nuts.

2️⃣ In a small pot, gently melt the coconut oil with the honey and maple syrup.
Whisk until smooth and glossy.

3️⃣ Pour the warm syrup over the dry ingredients.

Mix well — and really mix. I usually set a timer and stir for a few minutes so everything gets evenly coated.

4️⃣ Spread the mixture onto a large sheet pan.

5️⃣ Bake at 325°F for 30–45 minutes.

If the top is getting too brown, give it a stir halfway through.

6️⃣ Remove from the oven and immediately add the dried fruit while everything is still warm.

7️⃣ Gently toss, then finish with a sprinkle of Maldon salt.

8️⃣ Let the granola cool completely — either on the sheet pan or back in your big bowl.

This is key! You want it fully dry before storing so it stays crisp.

Store in an airtight container… if it lasts that long. 😉

Make them once and you’ve got easy weeknight dinners, meal prep lunches, and freezer-friendly meals ready to go.

• Air fryer friendly (frozen: pop one into the air fryer for 6 minutes at 400˚)
• Freezer friendly for future you
• Great for salads, sandwiches, pasta nights, or eaten straight off the cutting board

🎁 I haven’t bought a gift bag in years — an 🎁 I haven’t bought a gift bag in years — and once you learn this, you won’t either. ✨

All you need is wrapping paper, a little tape, and about 60 seconds.

How to make your own gift bag from wrapping paper:

1️⃣ Cut a rectangle of wrapping paper
• Width = how wide you want the bag
• Height = how tall you want it (plus a few extra inches)

2️⃣ Fold the paper around your gift like you’re wrapping a box
• Overlap the edges slightly
• Tape the seam closed

3️⃣ Create the bottom of the bag
• Flatten the bottom opening
• Fold the bottom up about 2–3 inches (how much space you use depends on how wide you need your bag)
• Open that fold and squash it flat into a diamond shape

4️⃣ Fold the diamond closed
• Fold the bottom point up
• Fold the top point down
• Tape securely

5️⃣ Stand it up + shape it
• Gently open the bag
• Press the sides in slightly to create clean edges

✨ Optional but cute:
• Fold the top edge over once or twice
• Punch holes + add ribbon handles
• Drop in tissue paper and call it done

It’s thriftier, prettier, and way more satisfying than those crinkly store-bought bags.

It’s great for when you have that ONE item you don’t have a box/bag for, too!

If you’re covering a cheesy casserole with foil, use Reynolds nonstick foil — and make sure the nonstick side faces the cheese.

Why?

It’s such a small detail, but it makes baked pastas, lasagnas, and casseroles feel calm instead of chaotic.

I make my own cheese blends. Every time.

For lasagna and homemade pizza, I run this combo through my rotary grater:
🧀 Low-moisture mozzarella
🧀 Fresh mozzarella
🧀 Provolone
🧀 Romano

Here’s why:
✔️ Better melt
✔️ Better stretch
✔️ Better flavor
✔️ Zero anti-caking agents

Pre-shredded cheese is convenient — but freshly grated blends melt smoother, brown better, and taste like you actually meant to make something special.

Once you start blending your own cheeses, you’ll never go back.

Apparently not.

Before I build any lasagna, I lay the noodles in a half-sheet pan, pour boiling water over them, and let them soak for a few minutes.

✨ No broken noodles
✨ No dry edges
✨ No fighting stiff pasta while layering

They come out perfectly pliable, easy to trim, and cook beautifully in the oven — especially for big, cozy, feed-a-crowd lasagnas.

This is your sign to stop wrestling with noodles and start building your lasagna like a calm, confident hostess. 😉

It’s a 16 ounce carton of sour cream mixed with a can of Rotel tomatoes and chilis, plus a packet of Ranch Seasoning. 

Stir this together and serve with tortilla chips and fresh veggies. 

Pro Tip: use this with your Chalupa toppings bar! It’s a fantastic taco topping!
