Are you rushed off your feet?

It’s Monday, and we’re nearing the end of April — Can you believe it?! 😱

While this spring may feel different, it doesn’t mean it can’t be filled with good food!

Bring leftover grilled chicken to life with a garlicky, tomato salad. 🧄

Yep! That same grilled chicken from Sunday afternoon!

This is the same tomato salad that I use on Bruschetta — and it’s quite the dish!

TOMATO SALAD:

2 cups cut up tomatoes
3 garlic cloves, minced (I grate mine over my microplane)
1 shallot, finely diced
2 TBS red wine vinegar
1 TBS capers (with the brine)
Fresh basil, to taste

Mix all these up REALLY well, so the garlic and shallots distribute well. Allow to chill in the fridge for an hour before serving on grilled bread, or over grilled chicken! This is also delicious tossed with mozzarella pearls for an unbelievable caprese salad.

With another busy week starting tomorrow, I’m grilling up some chicken!

The grilled chicken will be used in all kinds of ways this week!

Starting with Keto Italian Pizza Zucchini Bake…

Tomorrow evening, I’ll sauté up some zucchini and onions, and add in the grilled chicken.

Top it with marinara, mozzarella cheese, and pepperoni for a super simple, quick, and easy Monday night meal!

Y’all know I’m not a leftover eater…this is how I do leftovers.

And! This is one of the recipes you’ll need to save for when your garden picks up and starts delivering all the zucchini!

I always forget just *how* good this salad is...

The tangy but sweet dressing with the crunchy fresh broccoli, along with the spicy shallots...it’s a marriage made in heaven! 🤩

Best part... You can make all the components ahead of time! 😱🥳

Here’s your action plan:

🥓 Roast up some crispy bacon
🥦 Chop your broccoli into bite sized pieces
🧅 Slice your shallots
🧀 Grate your cheese
🥣 Mix your dressing

An hour before serving time, plop it all into a bowl along with some dried cranberries and mix, mix, mix, mix, mix.

Be sure to put it back in the fridge to let everything get happy! 🥰

But, that can’t stop you from having a delicious Easter dinner this weekend! 🥳

On Saturday, go ahead and mix up this Deviled Potato Salad, so it’s ready to go when you are on Sunday!

If you like egg salad and you like potato salad, you’ll L-O-V-E this version.

It’s like egg 🥚salad and potato 🥔 salad got cozy together and had a baby!

The zingy secret is once your cut up potatoes are cooked through on the stove stop, pour them into a colander. Shake white wine vinegar overtop the potatoes (still in the colander!) and cover with a clean dish towel, letting them hang out.

The potatoes will absorb the vinegar and give an extra umami punch you didn’t know you were missing all along!

Vanilla Almond Iced Tea!

This recipe is a oldie but a true Goldie! 🎉

In the south people are known by their glass of tea...and maybe the porch you share it on! 🥰

This tea recipe uses simple store bought staples, that you pour together.

It’s definitely a cheater iced tea recipe, and I’ve been chastised for it...a LOT! 🤦🏼‍♀️😬

Here’s how you make it!

✅ Pour a bottle of UNsweetened tea into your drink dispenser.
✅ Pour a bottle of Simply Lemonade in the dispenser.
✅ Add ✌️ tablespoons of vanilla extract.
✅ Add ✌️ tablespoons of almond extract.

🥄 Stir them together, top with ice, and garnish with lots of sliced lemons. 🍋

It’s the PERFECT Easter weekend drink! So refreshing with an extra zing you didn’t know you were missing in your life! 🥳

My Tomato Salad isn’t the usual few ingredient tomato salad…

🍅 It’s got fresh tomatoes, cut up, so the juices flow freely.
🧅 Shallots
🧄 LOTS of Garlic! (Grated over a microplane!)
Capers—yep! That brine-y goodness is amazing!
Balsamic Vinegar + Red Wine Vinegar
And *good* Olive Oil

🥗🍔 Burger Cobb Salad is the ULTIMATE salad filled with all the #lowcarb things a burger needs.

If you’re eating low carb or a #ketodiet you’ve probably come across MANY burger recipes that don’t have buns.

Wrap it up in lettuce, eat it with a fork, use mushroom caps.

All great ways to eat the classic burger when you’re on a low carb diet. 🚫
