I love a good beef tenderloin! It’s one of my favorite things to make and serve to the people I love.

But, to make the Beef tenderloin feel *super* special and fancy, you’ll need side dish recipes that pair well.

This is a quick overview of how I make roast beef tenderloin.

When you see a sale on whole beef tenderloin, buy it! The Fresh Market will run sales occasionally, and I’ll shell out big dollars for it! Buying the whole tenderloin ensures a delicious cut of meat, for many recipes. While it’s not cheap upfront, when you see how far it goes, it’s worth it in the end.

You can find videos on Youtube on how to trim your beef into either filet mignon, the most tender cut of beef! I prefer to trim mine and leave it as a whole as possible.

Beef tenderloin dinner stars with a simple marinade of Worcestershire sauce and Montreal Steak Seasoning helps, but kosher salt and black pepper are a great option when you want to keep it simple.

I like to roast mine in the oven, under the broiler for 5-8 minutes per side, then let it sit out on the counter covered, with plenty of time to rest. After an hour, you can pop it back into a 350˚ oven and let it warm up a bit. If you’re worried about whether you’ve cooked your beef enough, use an instant-read meat thermometer and gauge for yourself.

On Christmas Day, when everything is crazy, this simple recipe is my go to no fail recipe! I can make all the favorite side dishes ahead of time (for the most part!), bake them while the tenderloin rests, then serve everything together.

On party day, I’ll remove it from the fridge an hour before serving, and let it come to room temperature. Slice it onto a large platter, and serve with horseradish cream sauce, some baguette slices, and let guests make their own sandwiches. Everyone goes nuts over it!
