Sheet Pan Roasted Fingerling Potatoes

Sheet Pan Roasted Fingerling Potatoes are what every fall table needs as a side dish. Deliciously simple, extra crispy, and super easy to prepare!
Having a few go-to side dish recipes in your go-to recipe bin. And, anything that requires 3 ingredients, a 425-degree oven, sheet pan, and most times, it’s exactly what the menu calls for!

Seriously, though! Most every recipe that is “so good!” is simple ingredients, paired well. If you are new to cooking at home, or struggle with creating meals that wow your entire crowd, you need to know a couple of things:
- Good food matters.
- Good ingredients matter.
These fingerling potatoes came from a farm right up the road, about 5 miles from my home. I love how Asheville has a farmers market almost every day, filled with local ingredients. As much as possible, I’m trying to purvey the ingredients for Sweetpea from these growers. Not only to support their hard work but because they really are the best!
HOW TO MAKE SHEET PAN ROASTED FINGERLING POTATOES
Gently scrub each potato with a gentle brush, such as this one, running under cold water.
Slice each potato in half, lengthwise.
Dump into a large mixing bowl, and coat with olive oil and smokehouse maple seasoning.
Roast at 425-degrees for 25 minutes.
WHY ARE FINGERLING POTATOES SPECIAL?
- they have very thin skin, which you don’t need to peel.
- the inside is super buttery soft, has an almost nutty flavor.
- super versatile, great roasted, in soups, boiled or pan-fried.
WHAT IF YOU CAN’T FIND FINGERLING POTATOES?
Fingerling potatoes aren’t available all the time – usually only in the spring and fall. I’ve found them in a couple of grocery stores year-round though. Yukon Gold potatoes are a great option when you can’t find Fingerling Potatoes.
TIPS FOR ROASTING FINGERLING POTATOES

The number one thing to remember when roasting potatoes, or any veggie with a flat surface, turn all the veggies cut side down, so the flat surface is on the pan. That’s where the roasty-toasty-crispy-crunchy magic happens.
Also, if you ever go to flip your potatoes, and one won’t come up, let it roast a little longer. Eventually, when it’s ready, it will release itself.
Another quick tip to make this dish *sing* when you serve it, sprinkle flaky sea salt after you’ve plated on whatever dish you are using.
WHAT CAN I SERVE WITH SHEET PAN ROASTED FINGERLING POTATOES?

Adding to roasted potatoes gives a delicious creamy addition to a salad. When I was in France, I had a delicious salad with mesclun greens, roasted potatoes, and mustard vinaigrette. Ina Garten makes a version with crispy chicken. Such a great way to use up any leftover potatoes, if you have them!

Ingredients
1 pound fingerling potatoes, cleaned
1.5 tablespoons olive oil
1 tablespoon smokehouse maple seasoning
1 teaspoon maldon sea salt flakes
Instructions
- Preheat oven to 425˚
- Slice potatoes in half, lengthwise and place in large mixing bowl.
- Drizzle olive oil over top + smokehouse maple seasoning.
- Toss well to coat each potato.
- Place cut side down on a half sheet pan, creaful not to crowd the pan.
- Roast at 425˚ for 20-30 minutes, depending on your oven’s exact temperature.
- Flip the potatoes at the 20 minute mark.
- After roasted until golden brown perfection, remove from the oven and place on serving dish.
- Sprinkle with Maldon sea salt flakes and serve!
Notes
be sure to invest in an oven thermometer, so you can know your oven’s exact temperature.
