I’ve become slightly infatuated with serving dinner parties on a tiered tower. Check out the Surf & Turf Tower or the Taco Party Tower! They’re so much fun, people love them, and they give a little excitement to an ordinary dinner idea.

Grilled Chicken Sandwiches are an easy dinner idea! You can make them however you want; I’m going to show you my way.

When I grill up chicken for sandwiches, I keep a couple of things in mind.

Someone might not want a bun, so the chicken needs to be packed with” universal” flavor—not spicy, sweet, etc., just a nice flavor!

I usually have a couple of leftover chicken pieces, so I like to plan ahead about how to use them.

When I know those two things, that’s when I decide on my marinade recipe.

This chicken uses my go-to Summer marinade, which is a zhuzhed-up bottled Italian Dressing! It’s just a few swishes of Worcestershire sauce plus a delicious salt-free onion and herb seasoning.

I kept the tower simple with lettuce, tomato, bacon, mayonnaise, honey mustard, pickles, and buns.

When I’m entertaining at home, I want it to be as easy as possible so I can enjoy my party, too! Does anyone else feel that way?!

Grilling Chicken for Sandwiches

First, you’ll need to trim down your chicken. I used chicken breast, and I sliced them in half across the widest part.

If the bigger part of the chicken seems too big, when you place it in the baggie to marinate, give it a good couple of whacks with a rolling pin to flatten it out a bit.

Marinate your chicken in a baggie so you can flip it around and around.

Since the marinade is pretty acidic, it only needs an hour or so to pack in that flavor.

I used an indoor grill pan, but you can definitely use an outdoor grill! This was the first time I used The Whatever Pan, and I LOVED it!! When I went to clean it, everything slipped right off in one pass. Excited to have this!

I have a Le Creuset grill pan, but every time it fills my home with smoke, the smoke detectors go off, and it’s a pain!

The day before your party, set your table and prep your sandwich ingredients.

Wash your lettuce, make the bacon, etc.

The table was themed for patriotic holidays with Draper James Picnic Plaid Napkins!

When your people get there, have a snack and a cocktail ready.

I served Boat Dip with Watermelon Margaritas.

For the side dishes for the chicken sandwiches, a few bags of chips and broccoli salad were just the ticket.

You’ve got two options for the chicken.

Option One: Grill the chicken ahead of time. I don’t mind a cold, closer to room temperature chicken sandwich. Since I can’t grill outside, I opted to grill ahead of time!

Option Two: If you have a gas grill, grill up the chicken while people mill around with a beverage! You can add everything to the tower while the chicken rests and then plop the chicken on the tray.

Ingredients

  • 1 cup Bottled Italian Dressing (I prefer Wishbone!)
  • 2 TBS Worcestershire Sauce
  • 1 TBS Salt-Free Onion and Herb Seasoning
  • 3 Chicken Breast, cut into pieces


Instructions

  1. In a large ziptop bag, place your cut chicken with the dressing, Worcestershire sauce, and seasoning.
  2. Close the bag well, and flip around so each piece of chicken is fully coated.
  3. Marinate 1 hour.
  4. Grill over medium-high heat, about 5 minutes per side, depending on how thick your chicken is.
  5. When the chicken reaches 160 degrees internally, remove from the grill and cover with foil to rest for 10 minutes.
  6. Place the chicken on a tower with buns, bacon, lettuce, tomato, mayo, honey mustard, and pickles.
