​Cut your broccoli into pieces on the larger side, with plenty of flat sides down, so you can get optimal roasty-toasty-goodness.

​Next, you’ll need high-quality olive oil.

​Pro Tip: When you’re cooking a very simple dish like this Parmesan Roasted Broccoli, you want to use the highest quality you can afford! It’ll make all the difference.

Now, grab the fresh parmesan cheese from your grocer’s *nice* cheese section. The one with the stamped “parmesan” on the rind!

Now, let’s talk about the simplicity that is roasted vegetables!

​These tips go for almost any vegetable: brussels sprouts, green beans, potatoes, onions, carrots, etc.

You need olive oil plus seasoning. For me, that usually means “plain” kosher salt and cracked black pepper.

Sometimes the seasoning could be Italian seasoning or minced garlic. Whatever seasoning blend you love, use that when you’re roasting vegetables!

Take the broccoli out of the oven and grate the cheese over top or sprinkle it all over. Make sure you get some on the sheet pan, so it can get golden brown in the oven.

Once you’ve added enough parmesan to satisfy your heart, place the pan back in the oven to really brown and crisp up the parmesan broccoli.

Ingredients

  • 1 Broccoli Head, broken down into pieces
  • 1 TBS of Good Olive Oil
  • 2 TBS Grated Parmesan Cheese
  • Optional: zest of one lemon


Instructions

  1. Preheat your oven to 425˚.
  2. To your baking sheet pan, drizzle olive oil on the bottom, or use cooking spray.
  3. Place broccoli pieces, flat side down and drizzle with one tablespoon of olive oil.
  4. Roast at 425˚ for 20 minutes, or until the tops are slightly browned and the stems are tender.
  5. Remove from the oven and sprinkle with two tablespoons of parmesan cheese all over, don’t mix.
  6. Place back in the oven for 5 minutes, keeping a close eye! Allow the cheese to melt and crisp up a bit.
  7. Remove from the oven and serve as you’d like!
