Parmesan Zucchini
Are you ready for a three ingredient zucchini side dish idea?! It’s all the healthy you want, with a little slight cheesy goodness for you. But, it’s really because in the summertime zucchini is prolific, and you have to cook it every way possible!
My roasted zucchini recipe uses one of my favorite companies Penzeys Spices — they are a fabulous family company who makes the most delicious spices. This simple side dish recipe uses another Penzeys favorite. Brady Street Cheese Sprinkle. Y’all! This one is SO DELICIOUS! It’s like the best italian spices and finely grated romano cheese TOGETHER. And, on this zucchini, it’s just sublime! Brady Street Cheese Sprinkle is also delicious for mixing with olive oil and a splash of balsamic vinegar and dipping bread.

Ingredients
- 3 medium zucchini, cut into quarter inch quarters
- 2 tablespoons olive oil
- 1 tablespoon Penzeys Brady Street Cheese Sprinkle
Instructions
- Preheat oven to 425˚
- Slice zucchini in half, lengthwise, making two halves
- Slice each zucchini half in half again, lengthwise (now you have quarters!)
- Slice zucchini into quarter inch “quarters”
- Toss olive oil with zucchini and Brady Street Cheese Sprinkle
- Roast at 425˚ for 15+ minutes
