I have been a bit out of it this past weekend and week. I was bitten by the super sick bug, and hacked my lungs up. I’m feeling almost better now, and trying to play catch up in my world!
Last night we had a yummy dinner of Grilled Pork Chops, Tomato-Cucumber Salad, and Italian Oven Fries… These were to die for! So much so, by the time Mary my Mother got home all were gone…. Except a handful….. Oops. {That was DannyB who did all the eating – he’s a hungry boy.}
Here is a quick and easy recipe for Italian Oven Fries for you to try!
Italian Oven Fries
3-4 large Russet Potatoes
Large Bowl of Water with lots of salt & a handful of sugar
2 TBS Olive Oil
2 cloves minced Garlic
1 TBS Italian Seasoning – or freshly chopped herbs: Rosemary, Thyme, Parsley, etc
Salt & Pepper, to taste
Begin by peeling your potatoes, and slicing them into skinny strips. I slice the potato length-wise, then into strips. Slice the strips again, length-wise. Drop all your strips into a big bowl of salted-sugared water. Let these sit for a good 20 minutes. Go wash something or slice something. Turn your oven to 450˚ to let preheat.
Take your strips out, and dry them well on a clean tea towel. Place them on a single layer on a oiled half sheet pan. Take your 2 tablespoons of oil and spread on top of the potatoes, followed by your seasonings. Toss the potatoes around in the oil and seasonings till coated well. Place them in your hot, 450˚ oven and bake for 20 minutes. After bout 12 minutes, turn the potatoes over so they cook evenly. When they are brown and crispy-yummy remove from the oven and add plenty of salt and pepper. Serve warm with your favorite dipping sauces!
