- 8 ounces Jiffy Corn Muffin mix dry mix only
- 15 ounces whole kernel corn, drained
- 15 ounces creamed corn, not drained
- 1 cup sour cream
- 1/2 cup melted butter, for the casserole
- 1 stick of butter to melt in the cast iron skillet
Instructions
- Place a stick of butter in a cast iron skillet, and place in a COLD oven.
- Preheat the oven (and the skillet!) to 350 degrees.
- In a large mixing bowl combine all of the ingredients until well incorporated.
- Once the oven has preheated, remove the skillet (be careful!! It’s so hot!), and pour your batter into the center of the skillet.
- Bake at 350 degrees for 45 minutes, uncovered.
- Remove and serve!
