This Rotel Dip without Velveeta is the ultimate cheesy, beefy appetizer—made with taco-seasoned ground beef, pimento cheese, American cheese, and Rotel tomatoes—perfect for game days or any gathering.

- 1 lb ground beef
- 1 packet taco seasoning
- 1 (10 oz) can Rotel tomatoes (with green chilies), undrained
- 10 ounces Pimento Cheese (I prefer Queen Charlotte if you’re in the south!)
- 4 oz American cheese, cubed
- Tortilla chips, for serving
Instructions
- Preheat oven or grill to 375°F.
- In a skillet, brown ground beef over medium heat. Drain if needed and stir in taco seasoning.
- Add pimento cheese, American cheese, and Rotel tomatoes. Stir to combine.
- Bake uncovered for 15–20 minutes, or until bubbling and golden around the edges.
- Use a paper towel and soak up any extra grease that accumulates.
- Serve hot with tortilla chips.
