Rotel Dip without Velveeta

This Rotel Dip without Velveeta is the ultimate cheesy, beefy appetizer—made with taco-seasoned ground beef, pimento cheese, American cheese, and Rotel tomatoes—perfect for game days or any gathering.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 (10 oz) can Rotel tomatoes (with green chilies), undrained
  • 10 ounces Pimento Cheese (I prefer Queen Charlotte if you’re in the south!)
  • 4 oz American cheese, cubed
  • Tortilla chips, for serving

Instructions

  1. Preheat oven or grill to 375°F.
  2. In a skillet, brown ground beef over medium heat. Drain if needed and stir in taco seasoning.
  3. Add pimento cheese, American cheese, and Rotel tomatoes. Stir to combine.
  4. Bake uncovered for 15–20 minutes, or until bubbling and golden around the edges. 
  5. Use a paper towel and soak up any extra grease that accumulates. 
  6. Serve hot with tortilla chips.
