Roasted Rainbow Carrots are a 3 ingredient side dish recipe idea that is sure to please everyone around the table.
A smokey maple seasoning and olive oil complement the subtly sweet brightly colored carrots.
1 pound rainbow carrots, washed and sliced lengthwise
2 tablespoons olive oil
1 tablespoon smokehouse maple seasoning
- Preheat oven to 425˚.
- Toss sliced carrots with olive oil and seasoning blend in a large bowl, coating each carrot well.
- Lay out on a sheet pan so all flat sides are down, and spacing out so nothing is crowded.
- Roast at 425˚ for 15 minutes, checking to see if extra time is needed. You may need 10 more minutes or so. If the carrots are golden brown, take them out and serve!
