Description

How to host a roast dinner party is the dinner party menu you’ve been craving! Simple roasted chicken cutlets, broccoli, and potatoes


Ingredients

Scale

Chicken:

  • 68 Thin Cut Chicken Breasts
  • 2 TBS Olive Oil
  • 1 TBS The Usual
  • 1 Butter Pat per chicken piece

Broccoli:

  • 1 lb. Broccoli Florets
  • 2 TBS Olive Oil
  • 1 TBS The Usual

Potato Wedges

  • 2 Large Russet Potatoes
  • 2 Large Sweet Potatoes
  • 3 TBS Olive Oil
  • 1 TBS The Usual


Instructions

  1. Preheat your oven to 425˚.
  2. In a baking tray, place the thin chicken and coat with 2 tablespoons of olive oil. Sprinkle one tablespoon of The Usual seasoning over all the chicken, coating both sides. Place a pat of butter on each chicken piece, and set the tray to the side.
  3. On a half sheet tray, dump your broccoli florets out. If there are any really large pieces, cut them down so they’re all about the same size.
  4. Drizzle two tablespoons of olive oil and sprinkle one tablespoon of The Usual over the broccoli. Use clean hands to toss it all so the broccoli gets evenly oiled and seasoned.
  5. Place each floret with the flattest side on the bottom. Set the pan to the side.
  6. Slice your washed potatoes into wedges, around the same size.
  7. Place the wedges on a half sheet pan and drizzle with 1 1/2 tablespoons of olive oil and 1/2 a tablespoon of The Usual. Just sprinkle it evenly over the potato wedges.
  8. Flip the wedges over, and use the rest of the olive oil and seasoning to coat the other side.
  9. Place the potatoes in your oven FIRST, and set a timer for 12 minutes.
  10. After 12 minutes, add the chicken baking tray to the oven. You can check to see how the potatoes are roasting. If you flip them over, and one doesn’t flip over easily, place it back in the oven and let it roast for a few more minutes.
  11. After the potatoes have roasted for 15-20 minutes (the chicken will still be cooking!), remove from the oven and flip each potato wedge over. Place back into the oven and continue to roast for another 15 minutes.
  12. Add your broccoli into the oven when you add your potatoes back. Let the broccoli roast for 12-15 minutes.
  13. The chicken doesn’t need to be turned, but let it cook until it’s 165 degrees internally.
  14. Remove everything from the oven, and place it on your buffet line.
  15. Dinner is ready to serve!
