Ingredients
- 2 tablespoons butter
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 2 (10-ounce) packages frozen chopped spinach, thawed and well-drained
- 4 ounces cream cheese, softened
- 1 (5.2-ounce) package Boursin Garlic & Fine Herbs cheese
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese (optional, for extra richness)
- Salt and pepper, to taste
- Pinch of nutmeg (optional, but adds depth)
Instructions
-
Sauté Aromatics:
In a large skillet over medium heat, melt butter. Sauté the onion until softened, about 3-4 minutes. Add the garlic and cook for another 30 seconds until fragrant.
-
Cook Spinach:
Stir in the well-drained spinach, breaking it up with a spoon. Cook for 3-4 minutes to let excess moisture evaporate.
-
Add Creamy Goodness:
Reduce heat to low. Stir in the cream cheese and Boursin until melted and smooth. Pour in the heavy cream and stir to combine.
-
Season & Finish:
Add Parmesan, if using, along with salt, pepper, and a pinch of nutmeg. Cook for another 2-3 minutes until the mixture is thick and bubbly.
-
Serve:
Transfer to a serving dish and enjoy warm. It’s divine alongside roasted meats or as part of a holiday spread.
💡 Pro Tip: For extra flair, top with breadcrumbs and broil until golden and crispy!
