Description
American Greek Salad with Lettuce is a big green salad filled with all the feta cheese, tomatoes, onions, and cucumbers you love! The tangy Greek dressing has the best flavor and is perfect for a giant Greek Salad Platter!
Ingredients

- 2 Heads of Romaine Lettuce, chopped, washed, and dried
- 1 pint Grape Tomatoes, sliced
- 1 large, English Cucumber, diced
- 2 large Shallots, thinly sliced
- 4 Green Onions, sliced
- 4 ounces Feta Cheese, crumbled (the big brick in a brine is best!)
DRESSING:
- 1/2 cup Olive Oil
- 1/4 cup Red Wine Vinegar
- Juice of one Lemon
- 1 TBS Oregano (if using fresh oregano, use 1/2 tablespoon)
- 1 Garlic Clove, peeled and plopped into the jar
- 1 TBS Dijon Mustard
- 2 TBS Feta Cheese
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
Instructions
- Prep your Greek Dressing up to a few days ahead of time! Just add all the ingredients into a jar, and give it a really good shake until it’s all incorporated.
- For the salad, wash and dry your veggies then chop them all up to whatever size you prefer.
- If you’re making a big salad platter like the one pictured, you’ll lay down your lettuce first.
- Then, top it with tomatoes, shallots, green onions, cucumbers, and feta cheese.
- Serve the dressing on the side, or if you’re serving in a big bowl toss it all together.
Notes
I prefer to leave this salad undressed, and allow people to dress their own.
