I grew up on Jiffy cornbread. The only time I would have from-scratch-homemade cornbread was when we went up the mountain to my grandmother’s house. And, y’all… It wasn’t the same!

Sweeter cornbread is what I prefer, and a box of Jiffy Corn Muffin mix gives the best results.

I’ve got a few extra ingredients and hacks to make it a great side dish any sweet cornbread lover will enjoy!

How to Make the Best Jiffy Cornbread Recipe

First, you’ll want to pick up two jiffy mix boxes when you’re at the store. You’ll make this in a cast iron skillet, and in order to fill the pan, you need two boxes.

Hack #1: Double the eggs. The box instructions call for 1 egg but add one more for every box you’re using. This is the key ingredient! It takes the basic recipe and makes the original recipe so much better!

This is a quick bread, so no need to bring ingredients to room temperature!

Hack #2: use buttermilk instead of milk. This helps create a moist cornbread with a tender crumb.

Most southern cornbread uses buttermilk! Buttermilk creates a tender texture and also helps make more fluffy cornbread.

If you don’t have buttermilk, just add a teaspoon or two of white vinegar to your milk and let it sit for 5 minutes. (Maybe that’s Hack #3??)

Now, when you go to mix this together, it’s okay to have lumps. Of course, it’s nice if there aren’t huge clumps of dry cornbread with the mix, don’t over-mix it either.

Hack #3/4: Let the batter sit while your oven preheats. This allows the corn meal to expand with the moisture you’ve added.

You can use any baking dish you like, but I prefer a cast iron skillet that is preheated in the oven, along with either half a stick of butter or vegetable oil.

Add half a stick of salted butter to a cast iron skillet.

Put in a COLD oven, and preheat the oven to 400˚. Allow the butter to melt and get screaming hot with the pan.

Give the batter a good “lift and fold” to make sure it’s all evenly mixed. But, you won’t want to deflate any of the air.

When the oven is preheated, carefully remove your preheated cast iron skillet, and pour your cornbread batter into the skillet.

Bake at 400˚ for about 25-30 minutes, or until a toothpick comes out clean and the top is golden brown.

Fun Tip: You can use this recipe in muffin tins and create corn muffins if you’re serving a crowd! Follow the same recipe, and replace the cast iron skillet with a muffin tin.

Serving Corn Bread

Slice it up, and serve alongside a big pot of Pinto Beans and Ham or a slow cooker filled with Chili!
