How to Make Stuffed Jalapeno Peppers

First, let’s gather the ingredients you’ll need:

Fresh Jalapenos – the iconic green pepper you can find in any store.

Cream Cheese

Pimento Cheese – I buy the store-bought kind for this recipe, but if you want to make your own, use this Pimento Cheese Recipe!

Green Onion – sliced up, it adds a cooling factor to the spicy appetizer.

Browned Sausage – if you’re feeling super spicy, use hot sausage, but mild works so well! You can also use ground beef if you’d rather.

Now, let’s gather the kitchen equipment you’ll need:

Large Bowl – to mix up the creamy filling!

Disposable Gloves – when you’re handling the whole jalapenos and scooping out the inner membranes, it’s a great way to protect your hands, and keep you from touching your eyes with spicy fingers!

Spatula

Baking Tray – I like a half-baking sheet pan, or casserole dish to bake my stuffed jalapeños.

Parchment Paper – you can of course bake on the parchment paper for easy cleanup! I also use parchment paper when I’m freezing the baked stuffed jalapenos.

Some people use a plastic bag or piping bag to fill their spicy peppers, I just use a plain kitchen spoon, and call it a day!

Mixing up the Cheese Mixture

In a large bowl, add your softened cream cheese, sliced green onions, and a container of pimento cheese. Mix this around with your spatula, until well incorporated.

Add your brown sausage to the cheesy mixture, and give another good stir. I find it’s best to have the browned sausage either cold or room temperature and not too hot. That way it doesn’t melt the cheese before your stuffed you fresh peppers!

Easy Steps to Making Your Jalapenos

Using a very sharp knife, slice the peppers down the center like a hot dog, from stem to end.

The jalapeño halves have a white membrane inside that the seeds live in. This is SPICY! Using a spoon, just scoop each pepper out, and toss the seeds.

Once your jalapenos are deseeded and ready to be filled, go ahead and scoop out some filling, stuffing each jalapeno half VERY full!

You can definitely use a plastic bag or piping bag to fill each pepper if you’d like. I find that too cumbersome, and it’s easier to just pick up the jalapeno, and fill it like you’re filling twice-baked potatoes!

The stuffed peppers are ready for the oven when they’re all filled.

Have leftover stuffing?! Pop it into a baking dish, and bake for 20-30 minutes. Serve with tortilla chips for an easy appetizer idea!

Bake the jalapeno poppers at 350˚ for 1 hour, or until the tops of the cheesy mixture is golden brown, and the peppers are soft.

Once the peppers are cooked, you may want to drain them on a paper towel before serving.

Freezing Stuffed Jalapenos:

If you want to freeze your baked jalapenos, just lay them out on a parchment paper lined sheet pan, in a single layer. Place in the freezer for one hour to “flash freeze,” then pop them into a freezer-safe airtight container for later.

Reheat these spicy jalapeños either in an air fryer or oven at 350˚ for 8-10 minutes.

  • 16 ounces Pimento Cheese
  • 8 ounces Cream Cheese, softened
  • 1/4 cup Sliced Green Onions
  • 1/2 lb. Ground Sausage, browned
  • 12 Fresh Jalapenos, sliced in half, seeds and membrane removed.


Instructions

  1. In a large bowl combine the 16 ounces of pimento cheese, 8 ounces of cream cheese, and 1/4 cup of sliced green onions until well incorporated.
  2. Add the cooled brown sausage to the cheese mixture, and mix again until distributed evenly.
  3. Wearing gloves, slice each pepper in half and remove the seeds plus membranes.
  4. Fill each pepper with the sausage and cheese mixture, and place on a baking sheet tray.
  5. Bake the stuffed peppers at 350˚ for 45-60 minutes, until the tops are golden brown and the peppers are soft.
  6. Serve immediately with ranch or blue cheese dressing!

FREEZING AND REHEATING INSTRUCTIONS:

If you’d like to freeze the baked stuffed jalapenos, place them on a parchment paper-lined sheet pan. Freeze for 1 hour, then remove and place in a freezer-safe ziptop bag.

Reheat the stuffed jalapenos at 350˚ for 8-10 minutes either in an air fryer or oven.
