Puerto Rican Beef + Mashed Sweet Potatoes
Have you heard about the new way of eating called Clean Eating?? Or Paleo??
You are left with vegetables, fruits, meats, and nuts. While some may groan and moan about how “little” you are eating – in actuality, L-O-T-S of meals can be made from these ingredients!
Here is an example of an easy, filling dinner you can make in under half an hour!
Puerto Rican Beef + Mashed Sweet Potatoes
BEEF:
1 lb ground beef {preferably hormone free/organic}
1 small onion, diced
1 medium red bell pepper, diced
3 cloves garlic, minced
2 tbs Curry Powder
1 tsp Cumin
Salt & Pepper, to taste
One bunch of fresh Spinach
1/2 cup water
Brown the beef, and drain any grease. Add onions & peppers and cook till soft and tender. Add garlic at the end, as well as the spices. Add half cup of water & spinach. Simmer for 10 minutes, then serve over mashed sweet potatoes! Yumm!
*To make it {real} Puerto Rican Beef, you should add green olive with pimentos. I detest olives, therefore excluding them from the party!
POTATOES:
sweet potatoes, peeled and diced. Then boiled or roasted until soft and mash-able. Mash till smooth, adding a pinch of salt and pepper to taste.
